HONEY BUTTER SPREAD WITH STRAWBERRY VARIATION

Since my Dad was a beekeeper we always had LOTS of honey and this simple spread for toast was a morning staple. Its good on biscuits and home made yeast rolls, too.

Honey Butter Spread with Strawberry Variation image

Steps:

  • 1. Cream butter with a mixer until fluffy. Add honey in a fine stream. Blend in juice and brown sugar and mix until well blended. Refrigerate until ready to serve.
  • 2. STRAWBERRY BUTTER VARIATION: Omit brown sugar. Add 1 (10 ounce) package thawed frozen strawberries and 1 cup powdered sugar. Mix as above with mixer until nicely blended.

HONEY BUTTER:
2 stick butter
1/2 c honey
3 Tbsp lemon juice
2 Tbsp brown sugar
STRAWBERRY BUTTER VARIATION:
omit brown sugar
1 pkg (10 ounces) frozen strawberries, thawed
1 c powdered sugar

Steps:

  • 1. In a food processor puree the strawberries and force the puree through a fine sieve into a saucepan. Add the honey and the lemon juice and boil the mixture for 3 minutes or until it is thickened. Let the strawberry mixture cool to room temperature.
  • 2. In a bowl cream together the butter and strawberry mixture. Let the butter stand covered in a cool place for 1 hour to allow the flavors to develop.

1 pt strawberries hulled
3 Tbsp honey
2 tsp lemon juice, fresh or to taste
1 1/2 stick butter, unsalted spftened

Add the honey and the lemon juice and boil the mixture, stirring, for 3 minutes, or until it is thickened. Let the strawberry mixture cool to room temperature. In a bowl cream together the butter and the strawberry mixture. Let the butter stand, covered, in a cool place for 1 hour to allow the flavors to develop. Serve the butter with croissants or toast.

2 teaspoons fresh lemon juice, or to taste
1 1/2 sticks (3/4 cup) unsalted butter, softened

  • Combine the strawberry puree with the sugar, honey, lemon juice, vanilla extract, and salt in a deep pot set over medium heat. Bring the mixture to a boil, stirring frequently to prevent scorching.
  • Lower the heat and simmer until the mixture is very thick, about 60-90 minutes, stirring frequently. Any foam produced by the strawberries will disappear with the cooking process. The strawberry honey butter is finished cooking when it holds shape on a spoon.

  • Using a jar lifter, grab one canning jar, place on a towel or wooden cutting board, then ladle hot butter into a hot jar leaving a ¼ inch headspace. Remove air bubbles (this headspace tool is perfect for this). Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
