HONEY CITRUS SALAD

This salad is a delectably-fresh combination of summer tastes and yummy textures. Mix arugula and chopped lettuce with cherry tomatoes, mushrooms, diced avocado, dried cranberries, sunflower seeds, and pumpkin seeds. Toss with a light citrus vinaigrette. Everyone will love it !!

Steps:

VINAIGRETTE: Place all the ingredients in a jar. Cover and shake until combined. Store in the refrigerator for up to 1 week.
SALAD: Place all salad ingredeints in a large bowl. Toss with desired amount of salad dressing . Serve immediately.
TIPS: Use vinaigrette as a marinade for salmon or halibut. Marinate fish for 10 minutes before baking.
Replace the seeds with toasted nuts (almonds, pine nuts, etc).
Swap lettuce for spinach. A great addition to any family meal.

1/2 cup crisco canola oil
1/2 cup orange juice
3 tablespoons lemon juice
1 garlic clove, minced
1 tablespoon honey
1 teaspoon salt
1/4 teaspoon pepper
8 cups lettuce, chopped
2 cups arugula
2 cups cherry tomatoes, halved
8 mixed mushrooms, thinly sliced
2 ripe avocados, diced
1 small onion, chopped
1 cup dried cranberries
1/2 cup sunflower seeds
1/2 cup pumpkin seeds

This citrus salad requires only that you overcome the notion that salads must be green; it's a novel and wonderful antidote to sorry-looking lettuce. If you're lucky and can find blood oranges, use them; same with the odd, supremely delicious and usually quite pricey pomelos.

Winter Citrus Salad with Honey Dressing image

Steps:

Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.
Whisk together olive oil, vinegar, honey, lime juice and tarragon until well combined; taste, adjust seasoning as needed and drizzle over salad.
