OLD-FASHIONED HONEY BAKED APPLES

- Preheat oven to 350°. Core apples, leaving bottoms intact; peel top third of each. Place in a greased 8x4-in. glass loaf pan; fill with cranberries., In a small saucepan, combine water, brown sugar and honey; cook and stir over medium heat until sugar is dissolved. Pour over apples., Bake, uncovered, until apples are tender, 35-40 minutes, basting occasionally with juices. If desired, serve with ice cream.

APPLE 'DOUGHNUTS'
Make these doughnut-style apple rings for a picnic with the kids. Children will love helping to make, decorate and eat these fruity treats, and there's no cooking required

Steps:
- Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
- Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.

ROASTED HONEYNUT SQUASH WITH RADICCHIO AND MISO
What's a honeynut squash, you ask? It looks like a miniature butternut squash and has sweet, firm flesh that stands up to any cooking method.

- Preheat oven to 425°F. Cook farro in a large saucepan of boiling salted water until tender, 25-35 minutes. Drain; spread out on a rimmed baking sheet.
- Meanwhile, toss squash with 1 Tbsp. oil on another rimmed baking sheet; season with salt. Turn squash cut side down and roast until browned and tender, 20-30 minutes.
- Bring pine nuts and remaining 4 Tbsp. oil to a very gentle simmer in a small saucepan over medium, stirring occasionally. Reduce heat and cook at a very low simmer until nuts are light golden brown, about 5 minutes. Remove from heat and whisk in garlic and miso. Let cool (it will look a bit chunky and broken at this point). Add vinegar and 1 Tbsp. chives and whisk until dressing is smooth and emulsified; season with salt.
- Toss farro and a generous tablespoonful of dressing in a large bowl; season with salt.
- Toss radicchio and apple and 2 Tbsp. dressing in a medium bowl and toss to combine. Season salad with salt.
- Arrange farro on a platter; top with squash and salad. Drizzle remaining dressing over and top with more chives.
APPLE RUM BAKLAVA
This is a great Baklava recipe. A friend passed this along to me. I love the combo of apples and walnuts and is a favorite recipe when it's apple picking time. If you don't want to use rum; substitute 2 tablespoons lemon juice and 2 tablespoons lemon rind.

Steps:
- Combine first 6 ingredients in large bowl; mix well.
- Trim 8 sheets phyllo dough to fit 10 x 15-inch baking pan.
- Keep unused phyllo covered with damp cloth. Arrange in baking pan, brushing each sheet generously with melted butter.
- Spread half the apple mixture over phyllo dough.
- Arrange 6 trimmed buttered sheets of phyllo dough over apple mixture.
- Spread with remaining apple mixture.
- Top with 8 buttered sheets phyllo dough.
- Tuck in the buttered phyllo neatly around.
- Cut into squares or diamond using a sharp knife.
- Bake at 350°F for 40 minutes or until golden brown.
- Heat honey in small saucepan.
- Drizzle over hot baklava.

HONEY ROASTED BUTTERNUT SQUASH WITH APPLES & PECANS
I found this great recipe on the package of my fresh cut butternut squash. It looked yummy so I had to try it. The flavor of the roasted squash and apples with the crunch of the pecans is fantastic. This is a great way to get your family members to eat their veges. Enjoy.

- Preheat oven to 400 degrees. Place cubed squash and apple in an 8'x8' baking dish. Add 2 tablespoons water and roast uncovered, stirring occasionally for 20 minutes, or until almost cooked through.
- Meanwhile, in a small bowl, combine butter, honey, pecans, nutmeg, and cinnamon.
- Remove squash from oven, and pour honey mixture over squash. Stir lightly to coat.
- Return to the oven for another 10 minutes, or until cooked through. Remove from oven and serve.
