GRANDMA'S HONEY MUFFINS
I can remember my Grandma Wheeler making these delicious muffins-we'd eat them nice and warm, fresh from the oven! She was a "pinch of this and handful of that" kind of cook, so getting the ingredient amounts correct for the recipe was a challenge. Now it's a family treasure! -Darlis A. - Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, butter and honey. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds.

- In a large bowl, combine apples, sugar, raisins and nuts; set aside. In another bowl, beat eggs, oil and vanilla; stir into apple mixture. Combine dry ingredients; carefully fold into apple mixture. Do not overmix. Fill 18 greased muffin cups almost to the top. Bake at 375° for 18-20 minutes or until muffins test done.

- Heat oven to 400ºF.
- Combine baking mix, dry gelatin mix and cinnamon. Whisk egg, pumpkin and orange juice in large bowl until blended. Add combined dry ingredients and all remaining ingredients; stir just until moistened.
- Spoon into 12 muffin pan cups sprayed with cooking spray.
- Bake 20 min. or until toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool slightly.

~ MOIST HONEY NUT BANANA MUFFINS ~
When I have over ripe bananas, I always make muffins or bread. This time its a deliciously moist muffin, that's great for breakfast, kids lunches or anytime. Somewhat healthy too and could be made healthier with a sugar substitute. Love the honey and oat addition in my muffins. Yum! Enjoy!

- 1. Preheat oven to 350 degree F. Line muffin tin with paper cups. In a large bowl, beat butter and sugar until fluffy. Add banana, eggs, vanilla and honey - beat until well blended. Mix flour, oats, baking soda, baking powder and salt. Stir the dry mixture into the wet, just until incorporated. Fold in the nuts.
- 2. To each muffin cup fill 2/3 of the way full.
- 3. Bake for 15 - 18 minutes or until golden and pick comes out clean. Cool in pan for 10 minutes, then remove and finish cooling on rack.
- 4. Enjoy these tasty moist muffins.
