HONEY PECAN TRIANGLES
This is 1 of my many favorite recipes.

Steps:
- 1. Line a 13 X 9 X 2 inch baking pan with foil.
- 2. Butter the foil with 2 teaspoons butter.
- 3. In a mixin bowl, cream remaining butter with brown sugar.
- 4. Add egg yolk; mix well.
- 5. Gradually add flour.
- 6. Press into prepared pan.
- 7. Bake at 350 degrees for 15 minutes or until golden brown.
- 8. Meanwhile, in a saucepan, combine brown sugar, butter and honey.
- 9. Bring to a boil over medium heat.
- 10. Cook and stir for 3 minutes.
- 11. Remove from the heat.
- 12. Stir in cream and pecans.
- 13. Pour over crust.
- 14. Bake for 30 minutes or until hot and bubbly.
- 15. Cool completely on a wire rack.
- 16. Use foil to life bars out of the pan, and place on a cutting board.
- 17. Carefully remove foil.
- 18. Cut into 24 bars.

- 5. Add egg yolk
- 6. Mix well
- 7. Gradually add flour
- 8. Press into prepared pan
- 9. Bake at 350 degrees F for 15 minutes or until golden brown
- 10. Meanwhile, in a saucepan - combine brown sugar, butter and honey
- 11. Bring to a boil over medium heat

HONEY-PECAN SQUARES

- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides of pan. In a large bowl, cream the butter, brown sugar and salt until light and fluffy. Gradually beat in flour. Press onto bottom of prepared pan. Bake 16-20 minutes or until lightly browned. , In a small saucepan, combine the first six filling ingredients; bring to a boil. Cook 1 minute. Remove from the heat; stir in pecans and maple flavoring. Pour over crust., Bake 10-15 minutes or until bubbly. Cool in pan on a wire rack. Lifting with parchment, transfer to a cutting board; cut into bars.

HONEY PECAN TRIANGLES
These bars have all the goodness of pecan pie and are so easy to serve to a crowd. I've been stirring up batches for holidays for years now and it's something we all look forward to.

- Line a 13 inches x 9 inches x 2 inches baking pan with foil; butter the foil with the 2 tsp of butter.
- In a mixing bowl, cream remaining butter with brown sugar. Add egg yolk; mix well.
- Gradually add flour. Press into prepared pan. Bake at 350' for 15 minutes or until golden brown.
- Meanwhile, in a saucepan, combine the brown sugar, butter and honey. Bring to a boil over medium heat; cook and stir for 3 minutes. Remove from the heat; stir in cream and pecans.
- Pour over crust. Bake for 30 minutes or until hot and bubbly.
- Cool completely on a wire rack.
- Use foil to lift the bars out of the pan and place on a cutting board. Carefully remove foil. Cut into 24 bars; then cut each in haft diagonally making triangles.

HONEY-PECAN PUMPKIN PIE

- Make pecans:
- Place large piece of foil on work surface. Stir sugar, honey, butter and salt in heavy medium skillet over medium-low heat until sugar dissolves, butter melts and syrup comes to simmer. Add pecans. Cook until syrup turns deep caramel color and bubbles thickly, stirring nuts occasionally to coat, about 9 minutes. Scrape onto foil. Working quickly, separate nuts with spoon. Cool completely. Place in airtight container. (Can be made 3 days ahead. Store at room temperature.)
- Make pie:
- Position rack in lowest third of oven and preheat to 350°F. Roll out dough disk on floured surface to 12- to 13-inch round. Transfer to 9-inch-diameter glass pie dish. Fold overhang under; crimp edge, forming high-standing rim.
- Stir sugar and next 5 ingredients in large bowl. Whisk in pumpkin and honey, then cream and 3 eggs. Beat 1 egg in small bowl to blend. Brush inside of crust with some of beaten egg. Pour filling into crust.
- Bake pie until filling is slightly puffed and begins to crack at edges, covering crust with foil if browning too quickly, about 1 hour. Cool on rack. (Can be made 8 hours ahead. Store at room temperature.)
- Make topping:
- Using electric mixer, beat cream and honey in medium bowl until stiff peaks form. Spoon into pastry bag fitted with star tip. Pipe rosettes of cream atop pie. Garnish with candied nuts. Serve, passing extra nuts separately.

- In a small bowl, combine the sugar and flour. Stir in the eggs, honey, butter, vanilla and salt. Add chopped pecans and mix well. Pour into pastry shell. APPLE-HONEY-PECAN MUFFINS

- Place a rack in middle of oven; preheat to 350°F. Lightly coat flat top of a standard 12-cup muffin pan with nonstick spray (this will prevent muffins from gluing themselves to the pan). Line cups with double layers of muffin liners. Cut apples into quarters; remove cores. Cut each quarter into 4 wedges; set aside.
- Pulse pecans in a food processor until you have a fine meal with a bit of texture, like coarse sand. Heat a large skillet over medium-high, then add pecans and toast, stirring, until darkened and very fragrant (it's okay if they're even a tiny bit burnt in spots), about 3 minutes. Transfer to a large bowl and let cool slightly.
- Wipe out skillet and return to medium-high heat. Melt butter, swirling pan so that it's evenly coated, until foaming, then add reserved apples. Drizzle with honey and generously sprinkle with sea salt. Cook, tossing often, until apples are tender and deep golden brown and glazed with honey, about 5 minutes. Scrape into a medium bowl and let cool.
- Add all-purpose flour, spelt flour, baking powder, baking soda, and kosher salt to nuts; whisk to combine. Beat eggs and granulated sugar in the bowl of a stand mixer fitted with the whisk attachment on high speed until mixture is thick, pale, and tripled in volume, 8-10 minutes.
- Combine oil and buttermilk in a measuring glass. With motor running, gradually pour into egg mixture, stopping as soon as incorporated to prevent eggs from deflating. Scrape into bowl with dry ingredients and fold until just combined (be careful not to overmix). Scoop about 2 Tbsp. batter into each muffin cup and place an apple slice on top. Divide remaining batter among muffin cups, filling until just below the top (you may have a spoonful or two of batter left over). Place 1 apple slice on top of each, then spoon any glaze left in the bowl on top. (You'll have a few leftover apple slices; eat them.) Sprinkle each muffin with some raw sugar and a pinch of sea salt.
- Bake muffins until golden brown all over, rotating pan halfway through, 22-28 minutes. Let cool in pan 10 minutes, then transfer to a wire rack and let cool completely.
- Do Ahead: Batter can be made 2 days ahead. Cover and chill.
HONEY-GLAZED PECANS
An easy Honey-Glazed Pecans recipe.

- Preheat oven to 350°F.
- Stir together honey and pecans, tossing to coat well. Spread pecans in 1 layer in a shallow baking pan and sprinkle with sugar. Bake in middle of oven 15 minutes, then stir and bake 5 minutes more.
- Transfer while still warm to a sheet of parchment paper or foil and, working quickly, separate pecans with a fork. Cool completely (about 1 hour) and remove nuts from parchment, breaking up any large pieces.

This recipe is a little different from the others found here. It's very good and the crust does not need to chill. Makes an 8 inch square pan which works better for me.( I'll keep eating till its gone so the bigger pan is not ny friend)

- MAKE CRUST Adjust oven rack to middle position and heat oven to 375 degrees. Line 8-inch square baking pan with foil, allowing excess foil to hang over pan edges. Grease foil. With electric mixer on medium speed, beat 6 tablespoons butter and granulated sugar until light and fluffy, about 2 minutes. Add egg and mix until incorporated. Reduce speed to low, add flour, and mix until just combined. Press mixture into prepared pan, dock with fork, and bake until light golden, about 15 minutes. Cool on wire rack 20 minutes.
- PREPARE CARAMEL Melt remain-ing butter in large saucepan over medium heat. Add brown sugar and honey and cook, stirring constantly, until sugar dissolves, about 2 minutes. Slowly whisk in cream and cook for 30 seconds. Off heat, stir in pecans.
- BAKE BARS Pour caramel mixture over cooled crust. Bake until bubbly and deep golden brown, about 20 minutes. Cool completely on wire rack, about 1 hour. Using foil overhang, lift cookies out of pan. Cut into 2-inch squares, then cut each square into 2 triangles. (Cookies can be stored in airtight container for 3 days.).
