NUT BRITTLE

Although peanut brittle may be the most common variety, you can also use other whole nuts such as cashews, hazelnuts, almonds, or pecans, as well as toasted pumpkin seeds. When giving as a gift, package this nut brittle block with cellophane, and include a small hammer and bow.

Nut Brittle image

Steps:

  • Brush a 9-by-13-inch rimmed baking sheet with butter. Combine sugar, corn syrup, salt, and 3/4 cup water in a medium saucepan. Bring to a boil, stirring until sugar has dissolved. Wash down sides of pan with a pastry brush dipped in water to prevent any crystals from forming. Cook, swirling pan occasionally, until mixture reaches the soft-ball stage on a candy thermometer (238 degrees).
  • Stir in the nuts; continue to cook, stirring often so the nuts do not burn, until the mixture is golden amber in color. Remove from heat.
  • Carefully stir in vanilla and baking soda. The mixture will foam up in the pan. Pour the mixture onto the prepared baking sheet, and quickly spread with an oiled metal spatula. Set aside until completely cool. Break into pieces to serve. Brittle can be stored in an airtight container at room temperature up to 1 month.

1 1/2 cups sugar
1/2 cup light corn syrup

2 1/2 cups unsalted nuts, such as dry-roasted peanuts, cashews, hazelnuts, almonds, or pecans, or toasted pumpkin seeds

This is originaly from Gourmet magazine. While I'm not their biggest fan this was a keeper. I promise you that it will shake up the candy plate. Serving amount depends on the size of the pieces you breat it into.

Hot and Sweet Nut Brittle image

Steps:

  • Preheat oven to 375°F Place almonds in 15 1/2 x 10 1/2-inch jelly-roll pan. Bake 10 to 15 minutes until golden brown, shaking pan occasionally. Cool almonds in pan on wire rack.
  • While almonds cool, in heavy 3-quart saucepan, heat vinegar and 2 cups sugar to boiling over medium heat. Continue cooking over medium heat until mixture turns dark amber in color, 15 to 20 minutes, stirring occasionally. (If using a thermometer, temperature should read about 360°F.)
  • Meanwhile, in small bowl, mix salt, cumin, coriander, ground red pepper, and remaining 1 tablespoon sugar. Lightly grease large cookie sheet.
  • Remove saucepan from heat. Stir spice mixture into hot sugar syrup. Add almonds, and stir until evenly coated. Immediately pour mixture onto cookie sheet. With 2 forks, spread almond mixture to form a single layer.
  • Cool brittle completely on cookie sheet on wire rack. With hands, break brittle into small pieces. Store in tightly covered jar or tin for up to a month.

If you like nut brittle as well as I do, here is something a little different. This is almost foolproof if the steps are followed through in the correct order and you work fast. The chili powder adds a little kick at the end. I personally use a dried mixture of ghost pepper, Carolina reaper, and Caribbean red habiarino peppers...

Sweet and Spicy Brittle image

Steps:

  • 1. Read through entire recipe and have everything ready to go. Steps must go fast and in order to insure brittle will come out correct. In a large glass measuring cup, or glass bowl, mix sugar and corn syrup. Microwave for 5-7 min or until mixture has started to turn to a lite amber color. Keep a close eye on this, some microwaves cook faster than others.
  • 2. While the sugar and syrup is microwaving, quickly mix together butter, and all the nuts and seeds. When sugar and syrup is ready, quickly add nut and seed mixture, microwave 2 more min.
  • 3. As soon as the above comes out of the microwave stir in vanilla, salt, baking soda and chili powder, combine well and spread out on a silicone mat laid on a baking sheet with a silicone spatula (makes clean up so much easier), as thin as you would like your brittle.
  • 4. When cooled break into small pieces, store in airtight container.

1 c white granulated sugar
3/4 c lite corn syrup
1/2 c honey roasted peanuts
1 c mixed shelled roasted pumpkin seeds and shelled roasted sunflower seeds
1/2 c mixed nuts salted or not, your choice
1 1/2 Tbsp butter
1 tsp vanilla
1 tsp heaping, baking soda
3/4 tsp chili powder your choice on heat level
1/4 tsp sea salt

GRANDMA'S CHRISTMAS BRITTLE

Grandma's Christmas Brittle image

Steps:

  • Grease two baking sheets and keep warm in a 200° oven. In a large saucepan, combine the sugar, corn syrup and 1 cup water. Cook over medium heat, stirring constantly, until a candy thermometer reaches 240° (soft-ball stage). Stir in butter, salt and peanuts. Continue heating, stirring constantly, until the mixture reaches 300°., Meanwhile, combine the baking soda, 1 teaspoon water and vanilla. Remove saucepan from the heat. Stir in baking soda mixture. Quickly pour half the mixture over each baking sheet. Spread with a buttered metal spatula to a 1/4-in. thickness. Cool. Break into pieces. Store in an airtight container.

Hot Cinnamon Peanut Brittle image

Steps:

  • In a glass bowl, stir together the sugar, corn syrup, peanuts, cinnamon, and cayenne pepper until thoroughly blended. Microwave on high for 6 minutes. Slowly stir in the butter, and microwave an additional 30 seconds.
  • Very carefully remove bowl from the microwave as the contents will be extremely hot. Gently stir in baking soda until mixture becomes light and foamy. Turn batter out onto a lightly oiled cookie sheet, scraping sides of bowl with a rubber spatula. Allow brittle to cool for 1 hour, then break into pieces.

Mom's Best Peanut Brittle image

Steps:

  • Grease a large cookie sheet. Set aside.
  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
  • Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

Easy Nut Brittle image

Steps:

  • Spray a rimmed baking sheet and a wide metal spatula with cooking spray; set aside.
  • In a 2-quart glass measuring cup, combine sugar, corn syrup, and salt, stirring until sugar is moistened. Microwave on high for 4 minutes. Stir in butter and nuts; return to microwave for about 5 minutes, until the sugar mixture is thick, bubbly, and very pale brown in color. Mixture is very hot; use handle when holding and pouring.
  • Remove from microwave, stir in vanilla and baking soda (mixture may foam up). Immediately pour onto prepared baking sheet, spreading mixture as thinly as possible with the prepared spatula. Let stand 20 minutes until hardened, then lift off sheet, and break brittle into bite-size pieces.

Quick peanut brittle image

Steps:

  • Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
  • Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.

Steps:

  • Spray a large baking sheet or a 10x15 inch baking pan with cooking spray.
  • Set aside.
  • Mix sugar and corn syrup in large microwaveable bowl until moistened.
  • Microwave on high 5 minutes (caution, candy mixture gets very HOT).
  • Stir in butter and peanuts.
  • Microwave an additional 3-4 minutes or until pale golden brown.
