HOT BACON DRESSING
This is a recipe that my great grandmother made. You can serve this over cucumbers, cabbage or dandelion greens.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
- In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

HOT BACON DRESSING (HUDSON'S)
This bacon dressing is to be served with Hudson's chicken sandwiches. The recipe for the chicken sandwiches is listed as well. This is a long sought after recipe from the Hudson's dept. store in the early 1900's.

Steps:
- Fry bacon til crisp. Remove the bacon with a slotted spoon and set aside. Add onion to bacon fat in pan and cook 5 minutes til onion is soft. With a slotted spoon, add onion to bacon. Pour bacon fat into a measuring cup and add vegetable oil to equal 1/2 cup. Add bacon fat to cornstarch mixture and reserve. Combine vinegar, water, sugar, salt and pepper in a small saucepan and heat to a boil. Add cornstarch mixture and cook til thickened (1-2 minutes). Remove from heat and add bacon and onion. Use while warm.

HOT BACON DRESSING
This hot bacon dressing is based on memories of the wilted leaf lettuce salads my mother used to make. I also love this dressing on cobb salads, chef's salads and spinach salads.

Steps:
- Fry bacon until crispy.
- Remove bacon to paper towel covered dish to drain and cool.
- Reserve 1 1/2 teaspoons of the bacon fat.
- Combine flour, sugar, salt.
- Mix well with 1/2 cup water, let stand in mixing container.
- Heat vinegar and remainder of water to hot (do not boil).
- Add the hot liquid to dry ingredients, stirring well.
- Add the mixture to the bacon fat still in skillet, and cook to desired consistency. (If gravy like texture is desired, you can bring to a brief boil. Overcooking with cause it to congeal into a thick ball).
- If desired, you can crumble the bacon you fried and add to salad.
- Pour over your salad of choice and devour immediately.

- In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. - Fry bacon until crisp.
- Remove bacon from pan leaving fat.
- Set bacon aside.
- Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
- Remove onion from pan leaving fat.
- Set onion aside with bacon.
- Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
- Add fat/oil to cornstarch mixture and set aside.
- Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
- Add cornstarch mixture and cook until thickened about 1-2 minutes.
