INSTANT POT FROZEN CHICKEN BREASTS

Cooking frozen chicken in an Instant Pot® is a weeknight cook's secret weapon. Make sure you follow the directions for a 10-minute natural release; a quick release left us with dry and stringy meat. Allowing for the natural release let all the juices redistribute and we had a plump and juicy breast afterwards - perfect for chicken salad or anywhere you would use poached chicken.

Instant Pot Frozen Chicken Breasts image

Steps:

  • Put the frozen chicken breasts into an Instant Pot®. Sprinkle the chicken generously with salt and pepper. It is not necessary to add any water. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 10 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Allow for natural release for 10 minutes. This will ensure the juices are re-absorbed into the chicken.

Steps:

  • Pour chicken broth into a multi-functional pressure cooker (such as Instant Pot®). Add chicken breast and season with salt and pepper.
  • Mix together paprika, parsley, thyme, and garlic powder in a small bowl; sprinkle over chicken. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Transfer chicken to a cutting board to cool. Chop or shred for later use.

  • Place chicken breasts in the bottom of the Instant Pot (no need to use the trivet!) -- it's okay if they're stacked, just make sure none are stuck together.
  • Pour in the water or chicken broth (or use another liquid like pineapple juice, apple juice, etc.) and season with salt and pepper.
  • Put the lid on and move the valve to sealing. Press Manual pressure and set the timer to 10-12 minutes high pressure (I've found 10 is just right, and at the 12 minute mark they are 180 degrees F or more). The Instant Pot will take about 10 minutes to come to pressure and start counting down from 10.
  • When the cook time is up, let pressure release naturally for 5-10 minutes before releasing the remaining pressure. Check that the internal temperature of the chicken is 165 degrees F -- mine is always at least or higher.
