INSTANT POT EGG LOAF
When that egg salad craving hits, this hack makes it easy to prepare a batch of perfectly cooked hard-boiled eggs for chopping, no ice bath or peeling required. One more reason to love your pressure cooker.

- Lightly spray a 7-inch cake pan with nonstick cooking spray. Crack the eggs into the pan.
- Add 1 1/2 cups water to a 6-quart Instant Pot® and add the rack. Transfer the pan of eggs to the rack and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 9 minutes.
- After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
- Remove the pan and let the eggs cool to room temperature. Invert onto a cutting board and chop the eggs. Perfect for egg salad or to add to potato or tuna salad.
INSTANT POT HARD-BOILED EGGS
Hard-boiled eggs turn out perfectly every time when steamed in a pressure cooker: always evenly cooked and easier to peel than traditional boiled eggs.

- 5-Minute Quick Pressure Release Method:
- Pour the water into the Instant Pot and place a steamer basket or the trivet into the pot. Gently place up to 12 eggs into the basket or on top of the trivet, taking care not to crack the eggs as you add them. Secure the lid and set the Pressure Release to Sealing. Select the Manual setting and set the cooking time for 5 minutes at high pressure.
- While the eggs are cooking, prepare an ice bath. When the timer goes off, let the pressure release naturally for 5 minutes, then move the Pressure Release to Venting to release the remaining steam. Open the pot and transfer the eggs to the ice bath to cool. Peel when ready to serve.
- Natural Release Method:
- Pour the water into the Instant Pot and place a steamer basket or the trivet into the pot. Gently place up to 12 eggs into the basket or on top of the trivet, taking care not to crack the eggs as you add them. Secure the lid and set the Pressure Release to Sealing. Select the Manual setting and set the cooking time for 2 minutes at high pressure.
- While the eggs are cooking, prepare an ice bath. When the timer goes off, let the pressure release naturally for 15 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot and transfer the eggs to the ice bath to cool. Peel when ready to serve.

- Insert a wire rack in the bottom of a multi-functional pressure cooker (such as Instant Pot®). Pour in water. Carefully place raw eggs onto the rack, fitting them in tightly. Close and lock the lid.
- Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
- As soon as the timer goes off, hit cancel and release the pressure using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid, as leaving eggs in longer will result in overcooked eggs.
- Transfer eggs to a large bowl using a serving spoon and cover with cold water. Let cool for 5 minutes. Peel while still warm and rinse off any shell pieces. Use immediately or store in the fridge.

- Bring the water to a boil and immediately turn off the heat. Let the eggs sit in the pan for 15 minutes.

- 1. Put 1 cup water in 8 qt. Instant Pot. Place rack in pot. Place 8 eggs on rack, with space between each egg.
- 2. I live at 670' elevation. Higher elevations may have longer cooking times. Similarly, bigger eggs may need longer. Pressure cook high 4 min. 3 minutes NR. Immediately place eggs in an ice water bath for 6 minutes. (I partially fill sink with cold tap water & add all my ice packs to it.) Alternatively, you can pressure cook high 6 minutes, immediate manual pressure release, then ice bath for 5 minutes. Smack egg & roll on counter to crack shell, then peel. Store in fridge.
