BAKED PARSNIPS - IRISH RECIPE

Small parsnips taste much nicer than the larger ones, they have a nicer texture and do not have the woody taste that the larger ones sometimes have. They are a lovely alternative to potatoes, great with chicken, beef or pork.

Baked Parsnips - Irish Recipe image

Steps:

  • Preheat oven to 300 degrees f.
  • Peel and quarter the parsnips and boil for 15 minutes, making sure not to let them cook completely. You want them to be par-boiled only.
  • Place the parsnips in a large dish and add the Beef Stock , salt, pepper
  • and nutmeg. Taste and add more salt, pepper and nutmeg, if required.
  • Top with butter and cook for 30 minutes on a low heat in the oven.

  • Peel parsnips, quarter, and remove any woody core.
  • Parboil for 15 minutes.
  • Place in an ovenproof dish.

IRISH STEW

Every Irish household has their own version of this famous dish-so here's mine. I like to add chunky pieces of parsnip for a little sweetness, and fresh rosemary gives it a distinct flavour and aroma. If you use a tougher cut of meat, you can leave it to simmer longer before adding the potatoes. Fantastic on a cold, blustery day-served with a pint of the black stuff, of course!

Steps:

  • Heat oil over medium heat in a large stockpot or Dutch oven. Add lamb pieces and cook, stirring gently, until evenly browned. Season with salt and pepper.
  • Add the onion, carrots, and parsnips and cook gently alongside the meat for a few minutes. Stir in the water. Cover and bring to a boil before turning the heat down to low. Simmer for 1 hour or longer, depending on the cut of meat you used and if it is tender yet.
  • Stir in potatoes, and simmer for 15 to 20 minutes, before adding leeks and rosemary. Continue to simmer uncovered, until potatoes are tender but still whole. Serve piping hot in bowls garnished with fresh parsley.

  • Peel potatoes and parsnips and cut into large pieces; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain., Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the cabbage, carrots, thyme and Worcestershire sauce., In a small bowl, combine the flour, tomato paste and broth until smooth. Gradually stir into meat mixture. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender.
