PASTA E FAGIOLI WITH CHICKPEAS

Pasta e Fagioli with Chickpeas image

Steps:

  • Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the garlic and cook, stirring, until golden, about 2 minutes. Add the onion, carrots and celery and cook, stirring occasionally, until the vegetables start softening, 12 to 15 minutes. Stir in the tomato paste and rosemary and cook until the tomato paste darkens in color, about 3 minutes.
  • Stir in 6 cups water, the chickpeas with their liquid, the parmesan rind, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat and simmer until the vegetables are soft, about 10 minutes. Remove 1 cup of the soup (chickpeas, vegetables and broth) and puree in a blender, then return to the pot. (Alternatively, partially puree the soup in the pot with an immersion blender.)
  • Stir the pasta and escarole into the soup. Cook until the pasta is tender and the escarole is wilted, about 6 minutes. Remove from the heat and stir in the grated parmesan. Top each serving with the remaining 1 tablespoon olive oil and more parmesan.

Steps:

  • Cook the chicken and garlic in a 12-inch nonstick skillet over medium-high heat until the chicken is well browned, stirring often. Remove the chicken mixture from the skillet.
  • Stir the stock, tomatoes, Italian seasoning and black pepper in the skillet and heat to a boil. Stir in the pasta. Reduce the heat to medium. Cook for 10 minutes.
  • Stir in the vegetables and cheese. Return the chicken to the skillet. Cook for 5 minutes or until the chicken is cooked through and the pasta is tender. Serve with additional cheese.

1 pounds skinless, boneless chicken breasts, cut into 1-inch pieces

Every year on Christmas Eve my Nana makes a traditional Italian dish of baccala and chickpeas. I created this for a quicker and less-expensive version. It's even better the next day!

Italian Chicken and Chickpeas image

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Season the chicken with the rosemary on both sides; cook the chicken in the hot oil until browned evenly, 3 to 4 minutes per side. Remove the chicken from the pan and set aside.
  • Pour 1 tablespoon olive oil into the skillet. Cook and stir the garlic in the hot oil until fragrant, about 1 minute. Add the tomato sauce, Italian seasoning, cayenne pepper, sugar, bay leaf, and red pepper flakes to the skillet; stir. Return the chicken to the skillet; cover and reduce heat to medium-low. Simmer until the chicken is no longer pink in the center and the juices run clear, 10 to 12 minutes.
  • Stir the garbanzo beans into the skillet; continue cooking until the beans are heated, 2 to 3 minutes more.

My husband (and myself quite frankly) were concerned about the tomato soup but you don't even know that is what was used. It doubles very well.

Italian Gigi Sauce With Chicken and Pasta image

Steps:

  • Fill a large stove-top pot with water, cover and bring to a boil.
  • Heat oil in a large nonstick fry pan or wok at med-high.
  • Cut chicken into bite-size pieces and add to pan as you cut.
  • Add garlic and basil to pan. Toss occasionally until meat is no longer pink.
  • While meat is browning....
  • Slice onion and add to pan as you chop.
  • Wash and slice mushrooms, adding to pan as you slice.
  • Place pasta in boiling water, stir and cook uncovered.
  • Set timer according to package directions (approx 11 minutes).
  • Add tomato soup to chicken mixture and stir.
  • Gradually add milk, then salsa.
  • Stir well to combine.
  • Wash and chop the green onion. Set aside.
  • Rinse the cooked pasta under hot water in a colander. Let drain. Return pasta to pot.
  • Toss with olive oil and basil.
  • Serve sauce over pasta and sprinkle green onion for garnish.
  • Our family also loves a little parmesan cheese on top.

ITALIAN CHICKEN PASTA

I really like this recipe because the combination of artichokes, roasted peppers and olives gives it a great flavor and it is quick and easy to do. I originally found it in Bon Appetit years ago and it has been a favorite ever since. I sometimes add sun-dried tomatoes in oil but it is really good the way it is- even cold the next day for lunch. I also sometimes use penne or other shaped pasta. This is my first recipe posting and I hope you enjoy it.

Steps:

  • Heat oil in large, heavy skillet over medium heat.
  • Add onion and garlic and cook until onion is translucent, stirring and taking care not to brown the garlic, about 10 minutes.
  • Add chicken strips and stir until cooked through, about 5 minutes.
  • Mix in artichoke hearts and peppers with their liquid and olives and heat through.
  • Season to taste with salt and pepper.
  • Pour over pasta and toss well.
  • Serve, passing parmesan separately.
