Steps:
- If using sausage links, remove from casings.
- Crumble sausage in a large skillet and cook over medium heat until browned. Remove sausage and set aside.
- Add mushrooms and garlic to the drippings. Cook and stir until mushrooms are tender.
- Stir in the sausage, tomato sauce, tomato paste, and Italian seasoning. Bring to a boil, then reduce heat and simmer 15 minutes.
- In another skillet, brown chicken slightly. Remove from skillet and put in a 13x9 baking dish.
- Pour tomato sauce mixture over chicken. Cover with foil and bake at 350 degrees for 40 minutes.
- Uncover and sprinkle with cheese. Bake 5 minutes more (uncovered).
- Serve over hot pasta.

ITALIAN SAUSAGE AND CHICKEN

Steps:
- In a nonstick skillet brown the sausage (apprx 8 minutes).
- Then remove onto a plate.
- Then put in chicken and cook for 5 minutes, turning once.
- Put on plate with sausage.
- Heat oil in the skillet and add the garlic and rosemary and saute for 1 minute.
- Then add potatoes and water and cover and cook for 15 minutes.
- Then push potatoes over to the side of skillet and add back in the chicken and sausage.
- Add in the salt, pepper, wine, vinegar, and red peppers.
- Cover and cook an additional 35 minutes, when chicken registers 170*.
- Take chicken and sausage back out onto plate, and cover.
- Cover skillet back up and cook potatoes, until they are tender (apprx 8 minutes).
- Pour over chicken.

HOT ITALIAN SAUSAGE

- Preheat the oven to 350 degrees F.
- Combine all ingredients, except casings, in a large bowl. Put the meat mixture through a grinder and grind according to manufacturer's instructions. Tie a knot in 1 end of a casing and begin filling the casings with the meat mixture, then tie off the other end of the casing once all the meat has been used. Twist the casing into 6 sausage links.
- Bake sausage for at least 15 minutes. Meanwhile, preheat a grill.
- Remove sausage links from oven and place on grill. Grill until crispy and golden brown. Spice up your favorite pasta recipe by adding sausage slices or enjoy your sausage the old-fashioned way, on a bun topped with your favorite condiments.
SWEET ITALIAN CHICKEN SAUSAGE PATTIES

- Mix chicken with garlic, parsley, cheese, fennel seeds, pepper, and salt. Form 6 large, thin patties, 4 to 5 inches, or 12 small patties, 2 to 3 inches. Preheat a large, nonstick skillet and fry sausage in extra-virgin olive oil, 3 or 4 minutes on each side over medium to medium- high heat.
HOMEMADE ITALIAN SAUSAGE
One of my earliest and most vivid food memories was when my uncle Bill would make his famous dried Italian sausage every Christmas Eve. They'd be fried after Midnight Mass and served on bread with roasted red peppers. This fresh version was inspired by those. If you can manage not to eat them right away, letting them dry for a day or two really deepens the flavor, and firms up the texture as well, in true Uncle Billy fashion.

- Cut pork shoulder into cubes. Place in a bowl and refrigerate while preparing the other ingredients.
- Grind garlic with a pinch of salt in a mortar to make a paste. Add fennel, anise, and black pepper. Bruise spices lightly with a pestle to release the flavors. Add red pepper flakes, cayenne pepper, oregano, marjoram, coriander, mustard, allspice, sugar, and a splash of water. Stir to combine.
- Add the spice paste to the pork cubes. Mix thoroughly by hand. Add the remaining salt. Cover and refrigerate until flavors meld, 8 hours to overnight.
- Process the cold pork through a meat grinder on the slowest speed.
- Push a casing onto the stuffing tube of your meat grinder. Feed the sausage meat through the filling tray. Run the meat through the casing on the slowest speed until all the casing is used up. Tie casing at the end into a knot. Pinch and twist the meat to create links if desired.
- Place sausage onto a wire rack set over a sheet pan. Refrigerate uncovered for 24 hours.
- Preheat a charcoal grill for medium heat. Separate the links and grill them until browned, about 5 minutes per side.

- Heat the olive oil in a large skillet. Saute celery and onion until soft, about 5-7 minutes. Add sausage to skillet and continue cooking until sausage is cooked through.
- Add cream of mushroom soup and stir and cook for another 3 to 5 minutes.
- Place the chicken in a casserole dish evenly. Next, layer the sausage mixture over it. Then top with the wild rice.
- Bake in a 375 degree oven for 15 minutes.

- Arrange 2 racks in middle and upper thirds of oven and preheat to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.
- Toss bell peppers, onion, and tomatoes together in a large bowl with 1 tablespoon oil, balsamic vinegar, Italian seasoning, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Transfer to one of the prepared pans.

- Mix salt, rosemary, pepper, oregano, and basil together in a small bowl.
