Jack Daniels Pulled Pork image

Steps:

  • Mix the chopped yellow onion, chopped garlic, tomato paste, Dijon mustard, white vinegar, paprika, ketchup, Worcestershire sauce, Jack Daniels, brown sugar, black pepper, and bay leaf together.
  • Put the pork shoulder and sauce mixture in a large stock pot and cover with water. Bring to a boil and reduce to a simmer. Let the mixture simmer for two hours. You will know when it is done by the way the pork pulls apart so easily.
  • Take the pork out of the sauce a pull it apart. Then take the Jack Daniels sauce in the pan and reduce it to 1/3 of it's original amount. Mix the pork and the sauce together.
  • Serve on hamburger buns.

1 tablespoon tomato paste
2 tablespoons Dijon mustard
1/4 cup white vinegar
1 teaspoon paprika
1/3 cup ketchup
2 teaspoons Worcestershire sauce

1/4 cup light brown sugar
1 teaspoon ground black pepper
1 bay leaf
3 lbs pork shoulder
hamburger bun

PULLED PORK PANCAKES WITH JD SYRUP

Pulled Pork Pancakes with JD Syrup image

Steps:

  • 1. Blend the flour, baking soda, and salt in a bowl. In a separate, larger bowl, blend the egg and buttermilk. Fold the dry ingredients into the wet, taking care not to overmix. Leave the batter slightly lumpy.
  • 2. Heat some oil in a large nonstick pan over medium heat. Ladle about 1/4 cup pancake batter into the pan for each pancake, cooking 3 at a time. Cook the pancakes for about 2 minutes per side, flipping once when edges are golden and small bubbles form on top.
  • 3. To serve, layer hot pulled pork between the 3 pancakes. Cover with JD Syrup and top with a pat of salted butter. Repeat!
  • 1. Combine all the rub spices in a bowl and rub the pork butt with 1/4 cup of the spice mixture.
  • Wrap the pork butt in plastic wrap and refrigerate for 12 hours or overnight.
  • 2. Unwrap the pork butt and smoke for about 1 hour. (Follow the stovetop smoker manufacturer's instructions or use an outdoor smoker.)
  • 3. Preheat the oven to 225degreesF. Remove the pork butt from the smoker, place it in a roasting pan, and add the beer. Cover and braise in the oven until the pork is tender and pulls apart with a fork, about 3 hours.
  • 4. Pull the pork and mix it with 1/2 cup of the braising liquid and BBQ sauce to taste.
  • In a medium saucepan, heat the maple syrup over medium heat. Add whiskey to taste and bring to a boil for a couple of minutes. Keep warm to serve. Store leftovers in the refrigerator.

2 teaspoons cayenne pepper
2 tablespoons chile powder
3 tablespoons ground coriander
1 tablespoon dark brown sugar
1 tablespoon dried oregano
13 cup paprika
13 cup kosher salt
2 tablespoons ground white pepper
1 boneless pork butt, about 3 pounds
2 bottles or cans of your favorite beer
Your favorite BBQ sauce
One 12-ounce bottle pure maple syrup
Whiskey, such as Jack Daniel's

PULLED PORK WITH JACK & COKE BBQ SAUCE

These great sandwiches are from a recipe sent me by a friend. (Times listed do not include 24-hour marinating time.) I use the marinade and sauce recipes for other dishes, since we enjoy it so much.

Pulled Pork With Jack & Coke BBQ Sauce image

Steps:

  • Combine the ingredients for the marinade in a glass or plastic container large enough to hold all the pork (or beef brisket).
  • Add the pork, turning to be sure it is well coated, Cover and marinate in the refrigerator for 24 hours, turning occasionally.
  • Preheat the oven to 350 degrees F.
  • In heavy saucepan, combine the ingredients for the Jack & Coke BBQ Sauce, adding adobo seasoning or salt to taste, heat to almost boiling, and reduce heat to simmer 20 minutes. Cover and set aside.
  • Place the marinated meat in a roasting pan. Cover the roasting pan with aluminum foil and cook the pork in the preheated oven for 1-1/2 hours. Pour off 2/3 of the liquid in the pan and spread the meat with the barbecue sauce and return it to the oven, uncovered, for another 1-1/2 hours.
  • When the pork is done, it will shred easily with a fork. Test it, and if it's still a bit difficult to shred, return it to the oven for another 15 minutes and try again.
  • When the meat is done, taste to see of more salt and pepper is needed, remove it from the oven and shred it with a fork. Slice the rolls in half, pile on the pork, and serve with creamy coleslaw.
