Steps:

  • Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
  • If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
  • Bake until the bacon is sizzling and done, 1 hour 15 minutes. Serve immediately, or they're also great at room temperature.

JALAPENO CHEESE PIE 2

This recipe came from Southern Living. It is adapted from the cookbook, Cooking Texas Style: Tenth Anniversary Edition by Candy Wagner and Sandra Marquez. The heat of the peppers is soothingly coated with lots of cheese, so don't be afraid of the jalapenos! If you want a milder taste, just do half a jar of peppers--which would be about 4 of them. Stir in some leftover chicken or sausage for an easy brunch dish. With only 3 ingredients, what an easy dish to prepare! It's really delicious too!

JALAPEñO PEPPER GUIDE: HEAT, FLAVOR, USES - PEPPERSCALE
Jalapeño peppers have a Scoville heat unit range of 2,500 to 8,000 Scoville heat units (SHU). That’s mighty low compared to the hottest peppers in the world, some of which top the 1,000,000 SHU mark on the pepper scale. It’s also much milder than that cayenne pepper you have sitting on your spice rack (30,000 to 50,000 SHU).
