MANGO FLOAT
You'll want the ripest and juiciest mangoes to really do justice to this popular Filipino dessert. Made of layered whipped sweetened cream, graham cracker crumbs and fruit that's chilled overnight (think icebox cake), it's an easy no-bake dessert you can learn by heart.

Steps:
- Combine the cream, sweetened condensed milk and vanilla extract in a large bowl. Beat with a hand mixer until double in volume, about 4 minutes.
- Spread a scant 2 cups of cream in an 8-inch square baking dish, followed by 1/2 cup graham cracker crumbs and a third of the mangoes. Continue alternating layers for a total of 9 layers, ending with mango. Chill at least 8 hours and up to overnight.
CARIBBEAN FISH WITH MANGO SALSA
Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

- Mix together the paprika, curry powder, cumin, allspice, ginger, coriander, salt, black pepper, fennel, and cayenne pepper in a bowl; set the spice mix aside.
- In a bowl, lightly toss the mango, pineapple, red bell pepper, black beans, red onion, and cilantro in a bowl; pour lime juice over the mango mixture, and toss again. Cover the bowl, and refrigerate until chilled, at least 30 minutes.
- Whisk together the egg and milk in a bowl. In a separate shallow bowl, stir the panko crumbs with coconut. Stir about 1 tablespoon of the spice mix, or to taste, into the panko crumb mixture.
- Heat olive oil in a skillet over medium heat. Dip tilapia fillets into the egg mixture, then press gently into the panko crumb mixture to coat both sides of fillets. Brush off any loose crumbs, then lay the fillets into the hot oil. Pan-fry until the fish is opaque inside and golden brown outside, 3 to 5 minutes per side or as needed. Serve with mango salsa.

MANGONADA
When the summer sun screams across Mexico's city streets and sandy beaches, mangonadas come to the rescue. Also called chamangos, they can be made with any combination of mango sorbet, chopped fresh mango or mango purée, and may or may not be spiked, but they'll always contain the salty, spicy and tangy flavors of Tajín and chamoy. Tajín, a chile-lime salt, is a delicious addition to sweet and savory foods alike. Its sister condiment, chamoy, is traditionally made from fermented fruit, salt, sugar and chiles. Depending on your location, you can find Tajín, chamoy and tamarind straws - their sour, chewy coating adds an extra tickle of tartness - at supermarkets or Latin American grocers; all three are available online.

- Place 5 cups mango in a blender, reserving the remaining mango. Add the sugar, lime juice and 3/4 cup cold water to the blender, and blend on medium-high speed until puréed. Blend in tequila or rum, if using. Blend in additional water, adding 1/4 cup at a time, until mango mixture reaches the desired consistency.
- Chill mango mixture, covered, in refrigerator until ready to serve. For a colder mangonada, transfer mixture to the freezer until it reaches the consistency of a slushy.
- To serve, pour or scoop about 1/2 cup of mango mixture into each of four 16-ounce glasses. Add about 1/3 cup reserved mango to each glass, followed by 1 1/2 to 2 tablespoons chamoy and a generous sprinkle of Tajín. Repeat with the remaining mango mixture, mango pieces, chamoy and a final sprinkling of Tajín on top. Garnish each glass with a tamarind candy straw, if using, and a spoon. Serve immediately.
JAMAICAN FLOUNDER WITH MANGO LIME SAUCE
My husband hates fish. Wouldn't eat it to save his life. But I tried something a little different. The spices hide the fishy flavor very well. The sauce of this recipe came from one of my Pampered chef recipes for a chicken salad. It has great flavor and goes very well with this fish.

Steps:
- In a large nonstick skillet, preheat oil over medium heat.
- Coat fish evenly with Jamaican Rub.
- Dredge fillets in the flour.
- Place fish in skillet, cooking 5 minutes on each side, to get a nice crust on the fish.
- For the sauce, combine mango preserves and mayo in a mixing bowl.
- Zest 3 of the 4 limes into the mixture.
- Juice all the limes and combine into the mixture. Stirring well.
- Chop basil into thin strips. Combine to mixture.
- Spoon over hot fish and enjoy!

JALAPENO-MANGO SALSA
Steps:
- Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

- Jerk Chicken. Synonymous with traditional Jamaican food, jerk chicken can be found on almost every street corner on the island. From roadside stands to gourmet restaurants, this spicy, marinated chicken dish got its name from the method used to prepare it, called “jerk cooking”.
- Ackee & Saltfish. Jamaica’s national dish is a bit of an oddball. Made in part with the yellow flesh of boiled ackee (a round, reddish fruit that originated from West Africa) sautéed with salted codfish, onions, tomatoes, chilis and various spices.
- Coconut Drops. Sticky, sugary coconut drops are a go-to when your sweet tooth starts making demands. About the size of the palm of your hand and the texture of peanut brittle, coconut drops are often homemade and available for a quick bite in grocery shops, general stores, and markets.
- Fish and Festival. We cannot stress this enough. Special diets notwithstanding, you cannot leave Jamaica without indulging in a big plate of fish and festival!
- Run Down or Dip and Fall Back. Rest assured you won’t be doing a military drill after ordering a classic run dung. Instead, you’ll get a bowl of savoury, creamy, and fragrant fish stew made from large pieces of cod or mackerel, yams, tomatoes, and onions cooked in coconut milk.
- Curry Goat. Another iconic Jamaican dish that is served almost everywhere on the island. Curry was introduced to Jamaica by Indian immigrants who came to work on the sugar plantations.
- Oxtail. Whether made into stew or marinated with jerk sauce, Jamaican oxtail dishes are local favourites. Although rich and meaty, oxtails are incredibly tough and filled with cartilage.
- Pepper Pot Soup. A classic creole-style soup made with callaloo, a mix of chopped leafy greens, mainly amaranth. Pepper pot comes in different variations and can be served without meat ingredients.
- Gizzada. Also known as pinch-me-round, these mouth-tinglingly sweet tarts with pinched crust are stuffed with grated coconut and nutmeg fillings. Grizzada is a descendant of the Portuguese classic cheesecake pastry, Queijadas, which was introduced to the island by Portuguese Jews fleeing religious persecution in Europe around the 15th to 16th century.
- Jamaican Patty. This ubiquitous meat pastry needs little introduction. From every convenience store counter to every newsstand at your local subway station, the Jamaican beef patty is easily the most recognizable Jamaican food outside of the island.
