JAM JAMS

My good friend Leona gave me this recipe years ago when my children were all very small. They loved these cookies and so did I. Real good with a nice cold glass of milk.

Jam Jams image

Steps:

  • Cream together margarine and brown sugar. Beat in egg, molasses until fluffy.
  • Add soda with water, salt and vanilla.
  • Stir in eough flour to make a stiff dough for rolling.
  • Roll out 1/8th inch thick and cut into circles. (about 1 1/2 inches across).
  • Bake at 350*F for 8 to 10 minutes.
  • Cool on wire racks.
  • When cool put together in pairs with jam in the middle.

1 teaspoon baking soda, dissolved in
3 tablespoons hot water

2 cups flour (or more as needed to make a stiff dough for rolling)

Steps:

  • Mix in order.
  • Chill dough in fridge for about half an hour, as they roll out easier that way.
  • Roll out and cut cookies in circles.
  • Put one piece of dough down on cookie sheet, place a 1/2 teaspoons of jam on, and then cover up with another circle of dough on top, sealing edges.
  • Bake about 15 minutes in a 350° oven until golden brown.
  • Yields about 24 cookies.

1 cup brown sugar
6 tablespoons corn syrup
2 teaspoons baking soda
1/4 teaspoon salt
1 cup shortening
2 eggs
1 teaspoon vanilla extract
3 -4 cups flour

WATERMELON JAM

When I think of summer, I think of watermelon at its peak. This sweet, juicy and refreshing fruit is only here for a couple of months--definitely not long enough for me! I wanted to develop a simple and quick way to enjoy this summery fruit into the frosty months beyond. The consistency of the jam is slightly looser than traditional jam, but it's still very spreadable.

Watermelon Jam image

Steps:

  • Stir together the sugar (starting with 1/3 cup if your melon is perfectly ripe and sweet and up to 1/2 cup if it isn't), pectin and salt in a medium bowl until combined.
  • Add the watermelon to a blender or food processor and blend or pulse to the desired consistency. For a preserve or jam-like texture, blend or pulse for less time. For a smooth jelly, blend or pulse for more time. Stir in 2 teaspoons of the lemon juice.
  • Add the watermelon mixture to the sugar mixture and stir until well combined and the sugar has fully dissolved, about 2 minutes (this will also help the pectin bloom). Taste and add the remaining lemon juice, if desired. Let sit at room temperature until the mixture has thickened and coats the back of a spoon, about 45 minutes.
  • Spoon into two 8-ounce mason jars or another freezer-safe container. Cover and store in the refrigerator for up to 2 weeks or the freezer for up to 1 year.

  • Combine shortening, sugars,vanilla, and beat well.
  • add eggs and salt.
  • add milk with the 1/2 tsp soda dissolved in it.
  • add flour and baking powder.
  • Make a soft dough.
  • Roll on a floured board and cut with a glass in rounds Bake 375 degrees for 11 minutes.
  • Until nicely browned.
  • Cool on a rack.
  • Smear jam onto the underside of a cookie and place another cookie over to make a sandwich cookie or add some marshmallow fluff on one side and jam on the other and sandwich together also.
  • Sometimes we ice with a butter icing one cookie, jam on the other then place them back to back.

Steps:

  • Preheat the oven to 350 degrees F.
  • In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Steps:

  • To make the sour milk, mix the milk and lemon juice together in a small bowl and set aside until needed.
  • Preheat the oven to 350 degrees.
  • In a large bowl add the flour, baking soda, salt, oats, cinnamon and brown sugar together.
  • Next add the melted butter and shortening, mixing lightly.
  • Lastly, slowly add in the sour milk, making sure to mix well.
  • Chill the dough for 1/2 hour.
  • Then on a lightly floured board, roll to 1/4 inch thick.
  • Cut the dough using a 2" round cookie cutter. Make sure to have an even number of cookie rounds.
  • Place a spoonful of jam in the center of the cookie, then top with another cookie.
  • Make sure to lightly press the edges together.
  • Roll the cookie edges in the ground nuts.
  • Place on a lightly greased cookie sheet and bake in a 350 degree oven for 10 - 12 minutes.
