KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Steps:
- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

KAHLUA AND CREAM MUFFINS

Steps:
- Preheat oven to 200C (180C for fan assisted).
- Line a muffin tin with 12 liners.
- Sift dry ingredients into a large bowl, using the back of a spoon to push the light muscovado sugar through a sieve.
- Combine eggs, Kahlua, cream, and vanilla in a medium sized bowl, and mix with a fork. Try to avoid thickening the cream.
- Melt the butter in the microwave.
- Add all wet ingredients to the dry, and fold together with a large metal spoon until just moistened.
- Spoon into prepared muffin cups.
- Spoon 1/2T of double cream over the muffins, then sprinkle with demerara sugar.
- Bake for 20-23 minutes until the tops spring back gently when pressed.
- Cool on a wire rack.
KAHLUA MUFFINS
I found this recipe at Bed & Breakfast Online, a neat site that features B&B's from all over the U.S. and their favorite recipes. This recipe is from Highland Croft B&B in Guthrie, OK. It is an awesome recipe that fills the house with a wonderful aroma while baking and be warned, you won't be able to eat just one!

Steps:
- In a small bowl combine pecans, brown sugar and Kahlua.
- Let sit until needed.
- In a large bowl,and I do mean large, combine the cake mix, pudding mix, vegetable oil and sour cream, and mix on low speed until moistened.
- Add the eggs, one at a time and mix well after each.
- Beat for 2 minutes on medium speed, the mixture will be very thick, don't panic.
- Slowly mix in the pecan mixture, until well mixed.
- Pour into very well greased muffin cups, see note below.
- Bake at 350 for 15 to 20 minutes, or until toothpick comes out clean.
- Pop out of pan and cool on rack, if you can wait that long to eat one.
- NOTE: Make sure you use well greased muffin tins, if you're using non-stick pans.
- I spray mine with Baker's Ease and am sure to run my finger all around the inside and rim.
- I find the darker the pan, the better the muffin.
- If they stick, you did not grease enough.
- Just run a spatuala around the edge to release.
- I noted these make 18 regular size muffins.
- These do not rise a lot so you can fill 2/3 way full without spill over.
- When I make, I make 12 regular muffins and 6 mini-bundt size, or I might make 48 mini muffins and 6 regular muffins.
RHUBARB MUFFINS
Add these amazing muffins to your list of things to make with rhubarb. They are super light and fluffy and studded throughout with tangy bits of bright pink fruit. Before baking, the batter is sprinkled with a salty-sweet crumble, resulting in a hit of crunch with every bite. This recipe uses vegetable oil as opposed to butter, which helps keep the muffins moist for days!

- Preheat the oven to 375 degrees F.
- For the crumble topping: Add the brown sugar, flour, butter, cinnamon and salt to a medium bowl and use clean hands to mix the ingredients together until pea-size pieces form. Set aside.
- For the muffins: Spray a standard 12-cup muffin tin with cooking spray. Sift the flour, baking powder and salt into a medium bowl and set aside.
- Beat the butter and brown sugar in a large bowl with an electric mixer (or using a stand mixer fitter with the paddle attachment) on medium-high speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition.
- Reduce the mixer speed to low and add the flour in 3 parts, alternating with the milk in 2 parts, beginning and ending with the flour and beating until just incorporated. Fold in the rhubarb using a rubber spatula. Take care not to overmix the batter.
- Divide the batter evenly into the prepared muffin tin, leaving at least 1/8 inch of space at the top. Sprinkle on the crumble mixture, distributing it evenly.
- Bake until the topping is golden brown and a toothpick inserted into the center of a muffin comes out with just a few moist crumbs, 25 to 30 minutes. Le the muffins cool completely in the pan on a wire rack, about 30 minutes.
KAHLUA
This is a friend's recipe for Kahlua - it will make several bottles. The alcohol content works out to about 16% (32 proof). A note - this does need to steep for about a month, so if you're planning on making it, start early.

Steps:
- Dissolve the coffe crystals in one cup of the water.
- Bring the remaining water to a boil and dissolve the sugar in it.
- Add the coffee to the sugar solution and heat almost to a boil.
- Add the alcohol and decant into dark containers (this makes 7-8 cups; a fifth (750 mL) is just over 3 cups, so about 2 1/2 750 mL bottles- or just double it, make 5 bottles, and give some gift bottles).
- Break the bean into several pieces and divide between the bottles.
- Seal the bottles tightly and let them stand for 30 days before serving.

COFFEE CAKE MUFFINS WITH KAHLUA
Moist coffee cake muffins with a crumb topping are finished with a sweet Kahlua glaze.

- Preheat oven to 350 degrees F and line a muffin tin with liners.
- For the crumb topping combine the sugar, brown sugar, cinnamon, melted butter, and cake flour. Mix together until crumbly topping forms. Set aside.
- In the bowl of a countertop mixer with the paddle attachment, sift together cake flour, sugar, baking powder, baking soda, and salt. Stir until well combined. Add the softened butter and sour cream; mix until combined. Add eggs and vanilla. Mix just until liquid is absorbed. Batter may look lumpy.
- Fill the muffin cups about 1/2 full with batter. (Note: Do not add crumb topping yet.)
- Bake the muffins until the muffins are set but not quite fully baked, 23 to 25 minutes. Add a generous amount of crumb topping to the top of each muffin. Gently press the topping into the muffins. Continue baking until muffins are done, 8 to 10 more minutes. A toothpick inserted into the center of the muffin should come out almost clean once the muffins are done. Remove from oven and set on rack to cool slightly.
- While the muffins are cooling, make the Kahlua Glaze. Combine the powdered sugar and Kahlua in a small bowl. Stir together until a thick glaze forms.
- Drizzle the tops of the cooled muffins with the Kahlua Glaze.

- Preheat oven to 400F; in a 12-cup muffin pan, place paper liners in 10 cups and set aside.
- In a small bowl, dissolve instant coffee in hot water.
- In a large bowl, crack egg and whisk; stir in oil, milk, vanilla, and coffee mixture; combine well.
- In an another small bowl, combine dry ingredients.
- Gently fold dry ingredients into coffee mixture, just until mixed; do not overbeat.
- Spoon batter into the 10 paper liners and decorate the top of each muffin with a few chopped almonds, if desired.
- In the two unused muffin pans, place some water so they won't burn.
- Place in preheated oven and bake for 25 minutes.
- Remove from pan and cool on rack.

- Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
- Remove from the heat. Stir in the coffee. Allow to cool completely.
- Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
- Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.
