CHEESY HAM AND MUSHROOM STRATA

Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

Cheesy Ham and Mushroom Strata image

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
  • Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F.
  • Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
One 12-ounce loaf rustic Italian bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Swiss cheese
6 ounces diced ham

Ham & Cheese Strata (Kat's) image

Steps:

  • 1. Preheat oven to 350. Chop all vegetables, trim crust from bed, dice ham. Spray a 8x8 casserole pan with cooking spray, place bread on bottom, press in if needed. On top of bread layer half the ham, cheeses, peppers and mushrooms, then repeat.
  • 2. In a medium bowl, beat eggs, milk, salt, cayenne pepper and garlic powder together, pour over the ham/veggies and bread. Let it sit for 5-10 minutes. Mix corn flakes and butter and sprinkle over top (optional).
  • 3. Bake in oven for 30-45 minutes.(You may want to cover with foil if the ham starts getting to brown) The last 5 minutes you will want to remove and add the tomatoes and olives, return to oven and bake another 5 minutes, server with sour cream and salsa if you like.
  • 4. **** I DID NOT USE THE CORN FLAKES AND BUTTER IN MINE*** lol mainly because I forgot, but it was still really good, I just had to cover with foil and cook about 10 minutes longer

1/2 c diced black olives
1 c diced tomatoes (seeds removed)

Ham and Cheddar Strata image

Steps:

  • Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
  • Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
  • In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
  • Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.

Steps:

  • Combine milk, green onions, egg substitute, mustard, and pepper in a large bowl, stirring with a whisk. Add bread cubes and ham; stir well to combine. Pour into a 2-quart baking pan coated with cooking spray. Sprinkle with shredded cheese. Cover and chill 8 hours or overnight.

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese.
