KEBAB IROOG
In most Middle Eastern countries, kebabs are barbecued, but traditional Iraqi kebabs are made into patties and fried. The author of this recipe has tried them both fried and cooked in an oven, and prefers them baked. It also has an egg, which isn't traditional. Recipe found in Toronto Star website

Steps:
- Place all ingredients in food processor and process 1 to 2 minutes until dough-like consistency.
- Form into patties about 1/2-inch thick.
- Place patties in greased baking sheet. (If mixture is too soft, spoon on to sheet with large spoon or by heaping tablespoons, then form into patties.) Bake in preheated 350F oven 1 hour or until tops turn golden brown.**Alternatively, may be pan fried or barbecued**.
CHELO KEBAB IRAN
The chelo kebab is the national dish of Iran. Served on skewers over a bed of rice this recipe is basic, yet full of flavor. I prefer to grill this over a charcoal grill. Served with pita bread and salad such as tabbouleh.

Steps:
- In a mixing bowl combine all ingredients.
- Take about 1/4 of the meat mixture and form into a ball.
- Place ball through flat skewers.
- Press around skewer into square cigar shapes.
- Repeat with remaining meat for 4 kebabs.
- Place on grill and cook about 4-6 minutes each side, until meat is no longer pink and done.

Jazz up a shop-bought lamb burger with garlic mayo, gherkins and chilli for a hot and spicy twist. Perfect for lazy summer weekends

Steps:
- Combine the yogurt with the mayonnaise and grated garlic in a small bowl. Heat the vegetable oil in a non-stick frying pan over a medium heat, add the lamb burgers and fry for around 10 mins, turning over halfway through, until piping hot in the centre. Lightly toast the burger buns. Divide the sliced tomato, sliced gherkins, the burgers, some garlic sauce, chilli and the lettuce leaves between each burger bun, then enjoy immediately.
