KITTENCAL'S SPINACH SALAD WITH BALSAMIC HONEY-DIJON VINAIGRETTE

If you are a spinach salad-lover then this is one you should not pass up! Serve this to your guests or family then sit back and wait for all the rave reviews you will get! Add in some cooked shrimp or chicken breast if desired! the dressing can be made up to 2 days in advance, it will need a minimum of 2 hours chilling time to blend flavours, the dressing will make about 3/4 cup but it can easily be doubled. The salad amounts are only a guideline, all amounts can be adjusted to taste. Also see my recipe #66596 and recipe #116849.

Kittencal's Spinach Salad With Balsamic Honey-Dijon Vinaigrette image

Steps:

  • For the dressing; in a bowl whisk together garlic, salt, Dijon, honey and balsamic vinegar; add in olive oil in a slow steady stream until emulsified.
  • Adjust honey amount adding in more if desired for a sweeter taste, then season with more salt if needed, and black pepper.
  • Chill for a minimum of 2 hours before using.
  • For salad; place the spinach leaves in a large glass bowl; top with sliced mushrooms, bacon, blue cheese or feta cheese, croutons and sliced red onion (if using).
  • Toss all ingredients together with salad forks.
  • Season with black pepper (and salt if desired).
  • Place the egg wedges all around inside edges of bowl.
  • Serve with prepared dressing on the side.

Steps:

  • In a large salad bowl, combine spinach and mushrooms; set aside. For dressing, combine onion, salt, pepper and mustard in a bowl. Whisk in vinegar until well combined. Gradually whisk in oil, beating until thick. Stir in lemon juice., Pour dressing over spinach and toss well to coat. Sprinkle bacon over spinach and toss. Serve immediately.

2 cups torn spinach leaves
4 large fresh mushrooms, sliced
2 teaspoons grated onion
1 teaspoon salt
1/2 teaspoon pepper

KITTENCAL'S FAMOUS CAESAR SALAD

I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

Kittencal's Famous Caesar Salad image

Steps:

  • In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
  • Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
  • Adjust seasonings to taste.
  • Thin with buttermilk (or milk) for a thinner consistency if desired.
  • Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
  • Toss desired amount of dressing with Romaine lettuce and croutons.
  • Sprinkle with more grated Parmesan cheese if desired.

1 large head romaine lettuce (washed over and thoroughly dried)
1 1/2 cups garlic-flavored croutons (or to taste, see Kittencal's Garlic Croutons)
parmesan cheese
freshly grated black pepper (to taste)
2 anchovy fillets (or to taste)
2 fresh garlic cloves (or to taste)
1 cup mayonnaise (not salad dressing Hellman's is best)
1/4 cup half-and-half cream or 1/4 cup milk

  • Combine the spinach, strawberries, Gorgonzola cheese, and pecans in a large bowl.

This is wonderful either scooped on a bed of lettuce, stuffed in between a pita or slices of whole wheat bread --- plan ahead the mixture needs to chill for 4 hours before serving, don't even bother tasting before that time, the grapes or chopped apple must be added in just before serving --- *note* see bottom of recipe for poaching chicken breasts, I also sometimes like to add in 1/2 teaspoon curry powder, but that is only optional, recipe may be doubled :)

Steps:

  • In a medium bowl toss together chicken with celery, onions and cranberries.
  • In another bowl mix all dressing ingredients until well blended; add to the chicken mixture and toss to combine.
  • Cover and chill for a minumum of 4-24 hours.
  • Just before serving mix in grape halves then season with black pepper.
  • POACHING CHICKEN-------.
  • Place the chicken breasts in a saucepan.
  • Cover with water and 1/2 teaspoon salt (and 1 bay leaf optional) bring to a simmer.
  • Lightly simmer over low heat for about 15 minutes.
  • Remove from heat and let sit in the water for about 10 minutes.
  • Cool and chop.

Steps:

  • Sprinkle salt in a large bowl; add garlic.
  • Mash garlic and salt to a paste, using back of a spoon.
  • Combine honey, olive oil, and lemon juice in a jar.
  • Cover tightly and shake vigorously.
  • Add honey mixture to garlic mixture; stir well.
  • Cover and chill at least 2 hours.
  • Remove stems from spinach; wash leaves thoroughly, and pat dry.
