PEANUT BUTTER TRAIL MIX BARS
The original version of this recipe came from a jar of Smucker's Natural Peanut Butter. I've reduced the sugar significantly and substituted ingredients that I commonly have on hand for some of the original. Very tasty! I first sent them to school for parties for a couple of my kids several years ago and they STILL get requests...

HOMEMADE TRAIL MIX BARS
An attempt at a high-protein snack bar made from whole foods. It's more delicious, healthier, cheaper, and has less packaging than the store-bought bars. But it's also messier!

- Line a 9 x 13” sheet tray with parchment paper. Place rice cereal, chopped almonds, dried cherries, and pumpkin seeds in a large bowl. Set aside.
- Melt coconut oil in a sauce pan over medium-low heat. Once it has melted and begun to warm, add the marshmallows and peanut butter. Stir constantly using a nonstick spatula until melted down into a homogenous mixture. Should take only a few minutes or so. Remove from heat and stir in the vanilla and salt.
- Pour sauce pan contents over bowl with cereal and mix-ins. Working quickly, stir until evenly coated. Use a spatula to pour out the cereal-marshmallow mixture onto the parchment paper lined baking sheet. Press lightly to distribute evenly to corners of tray, use a second sheet of parchment paper on top to press down with your palms and prevent getting the sticky mixture on your hands.
- Allow to cool and set before cutting into 5 columns by 4 rows to create x20 rectangular bars. Store at room temperature in an airtight container, taking care to place a piece of parchment or wax paper in between any treats before stacking on top of one another to prevent sticking.

- Line an 8x8 baking pan with aluminum foil or parchment paper, leaving a few inches of overhang on two of the sides like handles. Generously coat the foil or paper with baking spray. Set aside.
- In a microwave-safe bowl or a small saucepan over medium heat, combine the honey, peanut butter, and coconut oil. Melt gently and stir until smooth and combined. Remove from the heat and stir in the vanilla extract. Let cool for 5 minutes.
- In a large mixing bowl, combine the oats, cereal, flaxseed, cinnamon, and salt, then stir in the dried fruit, nuts/seeds, and chocolate chips. Pour the peanut butter mixture over the top, then stir until the ingredients are evenly moistened.
- Scoop the mixture into the prepared baking pan, then with a spatula or your fingers, press into an even layer. If the mixture is too sticky, lay a sheet of plastic wrap over the top, then press on its surface. Place the bars in the refrigerator to set, at least 2 hours or overnight. Once fully chilled, remove the bars from the pan with the foil or paper “handles,” then, using a very sharp knife, slice into bars. Enjoy immediately or store in the refrigerator or freezer for later.
