L'ALOSE MARINEE AUX HERBES (GRILLED MARINATED SHAD WITH HERBS)

L'Alose Marinee aux Herbes (Grilled Marinated Shad with Herbs) image

Steps:

  • Put fillet on platter and sprinkle with salt and pepper. Add oil and turn fish to coat it.
  • Add lemon juice, bay leaf and thyme and spread around. Cover and let stand one hour.
  • Preheat broiler to high.
  • Remove shad from platter and arrange it skin side down on baking dish. Pour marinade into small saucepan and keep warm. Sprinkle fish with paprika, and brush top to coat evenly. Place under broiler about 4 inches from the source of heat, and broil about 5 minutes. Cut fish in half lengthwise.
  • Transfer fish to two hot serving dishes. Spoon a little of marinade over each serving. Serve with lemon wedges.

Langouste Grillée Aux Herbes (Crawfish Grilled W/ Herbs) image

Steps:

  • Plunge the crawfish/lobster in boiling salted water. When the crawfish/lobster no longer moves, remove them from the pot and split them into two halves on a plate, using a large knife.
  • Place each half on a heated oiled grill and cook for 12 minutes. Turn once or twice during cooking.
  • Mix the remaining ingredients together and baste the crawfish/lobster halves and continue cooking for 10 more minutes. Continue to baste as you turn and cook halves.
  • Just before serving time, bring sauce to a low boil for one minute, stirring continuously.
  • Serve lobster/crawfish halves with sauce in dipping container on the side.
