BRULEED WINTER-BEAN SOUP

Bruleed Winter-Bean Soup image

Steps:

  • Heat oil in a medium saucepan over medium heat. Add onion, celery, and carrot; cook, stirring occasionally, until tender, about 10 minutes. Stir in tomatoes with juices; cook 1 minute.
  • Add 4 cups water and Parmesan rind. Bring to a boil; reduce heat to a simmer and cook 20 minutes. Stir in beans and kale; cook, stirring occasionally, until kale is tender, about 5 minutes. Season with salt and pepper.
  • Heat broiler. Spread bread evenly on a rimmed baking sheet. Place under broiler and toast, tossing once, until golden, 1 to 2 minutes. Divide soup, croutons, and Asiago among 4 ovenproof bowls; drizzle each with oil. Broil until melted, about 1 minute; serve.

2 tablespoons extra-virgin olive oil, plus more for drizzling
1 small onion, finely diced
1 stalk celery, finely diced
1 carrot, peeled and finely diced
1 can (15 ounces) diced tomatoes
1 2-inch piece Parmesan rind
1 can (15 ounces) white beans, drained and rinsed
8 ounces kale, stems removed, cut into 1-inch pieces (6 cups)
Coarse salt and freshly ground pepper
4 slices country bread, cut into 1-inch pieces
1 1/2 cups coarsely grated young Asiago

Bean Soup With Cabbage, Winter Squash and Farro image

Steps:

  • Heat 1 tablespoon of the olive oil over medium heat in a large, heavy soup pot or Dutch oven. Cook the onion until it begins to soften, about three minutes. Add the carrot, celery and sage, and continue to cook, stirring, until the vegetables are tender, about five minutes. Add half the garlic. Cook, stirring, until fragrant, about one minute. Add the cabbage and a generous pinch of salt, and cook, stirring often, until the cabbage is limp, about 10 minutes. Drain the soaked beans, and add them to the pot, along with the squash, bouquet garni and 2 quarts water, or enough to cover by two inches. Bring to a boil, reduce the heat, add salt to taste and simmer 1 1/2 to 2 hours until the beans are tender. Remove the bouquet garni, and discard.
  • While the soup is simmering, heat the remaining olive oil over medium heat in a medium-size nonstick skillet. Add the remaining garlic and the rosemary. Cook for a half-minute to a minute until fragrant, and stir in the tomatoes. Add salt. Cook for 10 to 15 minutes, stirring often, until the tomatoes have cooked down and the mixture is thick, beginning to stick to the pan and delicious. Stir into the soup along with the cooked farro. Continue to simmer for another 30 minutes. Taste and adjust salt, and add lots of freshly ground pepper. Serve with freshly grated Parmesan.

Lea's Winter Bean Soup image

Steps:

  • Rinse dry beans in a strainer.
  • Put into crock pot and add about 12 cups of water (depending on how you want the consistency) and 1 Tbsp sea salt.
  • Turn on high and cook for about 3 hours.
  • Then add cooked hamburger, raw carrots, raw potatoes, onion, and all other spices. Continue to cook for another 5 hours or until beans, potatoes, and carrots are tender.
  • *Note- you can add everything raw at the beginning and then just allow it to cook all day. Add double or triple seasoning if you do it this way or it will be bland.

  • In a Dutch oven or soup kettle, saute the celery, onion and garlic in oil for 7 minutes or until tender. Add the next 12 ingredients; bring to a boil.   • Heat the oil in a large pan, add the leeks and cook on a low-medium heat for 5 mins. Pour in the bouillon, tip in the beans, cover and simmer for 10 mins.

Steps:

  • Heat the oil in a large saucepan and tip in the shallots, garlic, carrot, celery, leeks and bacon. Cook over a medium heat for 5-7 minutes, stirring occasionally, until softened but not browned.
  • Pour in the stock, then add the bay leaves and oregano or marjoram. Season and bring to the boil, then cover the pan and simmer gently for 15 minutes. Tip in the beans, cover again and simmer for a further 5 minutes.
  • Pour the soup into a freezer container and leave it to cool completely, then seal, label and freeze for up to a month.
  • Defrost the soup at room temperature for 3 hours, (or overnight).
  • Tip into a saucepan, reheat gently until bubbling, and simmer for 5 minutes. Taste for seasoning. Swirl in the chopped parsley, ladle into warm bowls and top each with a drizzle of olive oil and a parsley sprig.

Luscious Lima Bean Soup image

Steps:

  • Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, and allow the beans to sit, covered, for 1 to 2 hours to soften. Drain and rinse until water runs clear, discarding bean water.
  • In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes.
  • In the meantime, bring 4 cups of water to a boil. Add the vegetable bouillon to the boiling water, and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1 1/2 hours. Serve steaming hot.
