LINDA'S EXTRA LEAN BRUNCH BURRITOS / No Red-meat used image

Steps:

  • 1. Combine ground turkey and ground Italian sausage in an appropriately sized bowl. You want one uniform mixed meat.
  • 2. Heat skillet over medium heat, add 1 T olive oil and begin browning the meat until done: 20 minutes or more.
  • 3. Rinse the sweet peppers, remove seeds and stem, and slice into slender strips.
  • 4. In another skillet melt some butter or margarine and cook the scrambled eggs.
  • 5. Take a soft burrito and place onto a plate. Add American cheese slice (1-2 depending on your taste), spoon on the cooked meat, eggs, and add pepper slices. Fold and eat. A few seconds in the microwave will reheat if everything has become too cold.

1 lb very lean ground turkey
1 lb lean ground italian sausage (mild)
1 pkg sunset brand ancient sweets long red peppers
1 pkg american cheese slices
6 large eggs
1 Tbsp olive oil
1 pkg x-large whole wheat burrito shells
Optional onions, green peppers, or salsa

Steps:

  • Prepare your skillet by heating and oiling. When oil is hot, add bell pepper and tomato pieces. Stir constantly until peppers are tender. Add Eggs to veggies (it's easiest if you move the veggies to the side of the pan and put the eggs in the "empty" spot) and stir together, so that they are scrambled. Add seasonings. When eggs are done, turn off heat and add cheese. Dish egg mixture on to tortillas, add salsa to taste, roll tortilla up and enjoy!

Steps:

  • In a large bowl, combine the first 9 ingredients. Pour half of the egg mixture into a 4- or 5-qt. slow cooker coated with cooking spray. Top with half of the cheese. Repeat layers., Cook, covered, on low 4-5 hours or until center is set and a thermometer reads 160°., Spoon 3/4 cup egg mixture across center of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Add toppings of your choice.

  • Working with one tortilla at a time, spread about 1/3 cup hash browns on a tortilla about one-third from the edge. Drizzle 1 tablespoon salsa on top of the hash browns. Top with about 1/3 cup scrambled eggs. (You can eyeball the amounts of hash browns and scrambled eggs; just try to divide them evenly between the tortillas.)
