LOBSTER SPAGHETTI
This is a very simple Lobster Spaghetti recipe. I found this on the Olive Garden website. I've tweaked it slightly for our taste. My husband and I both love anything with lobster and anything with pasta. I purchase Lobster Tails when my market puts them on sale and take them home and freeze them until time comes to make this wonderful dish.

Steps:
- HEAT water in a very large stock pot until boiling.
- PLACE 1 lobster, head first, into boiling water. Allow to boil for 10 minutes. Remove from water and allow to cool slightly. Repeat process for other lobster. Once lobsters are cool enough to handle, cut lobsters in half lengthwise. * IF USING lobster tails, place both into boiling water. Allow to boil for 5 to 7 minutes. Remove from water and allow to cool slightly.
- COMBINE onion, garlic, and extra virgin olive oil in a separate large pan. Simmer for 5 minutes. Add crushed red pepper, white wine, sherry, and the halved lobsters OR lobster tails. Cover and allow to simmer for 10 minutes. Remove lobsters from the sauce.
- TWIST off two front claws where they join the body. Using the back of a knife, crack claws and remove meat from tail and body. * IF USING lobster tails, remove the meat from the shells. If desired, cut the lobster tails into large chunks.
- ADD spinach, tomatoes, and butter to sauce. Bring to a boil, lower the heat, and allow to simmer for 10 minutes. Add lobster tail and claw meat. Allow to cook for and additional 5 minutes. Season to taste with salt and pepper.
- COAT cooked, drained pasta with the sauce, transfer to large bowl (or individual dishes), top with lobster and remaining sauce.

CREAMY LOBSTER LINGUINE

- Heat a large straight-sided skillet over medium heat. Add the olive oil and bacon and cook until the bacon is beginning to crisp, 8 minutes. Add the shallots, garlic and red pepper flakes and cook for an additional 3 minutes, until fragrant. Add the salt, tomato puree and cream; stir to combine. Reduce the heat to low and simmer for 5 minutes.
- Bring a large pot of salted water to a boil. Cook the linguine for 1 minute less than the package instructions, about 10 minutes. Using tongs, remove the pasta from the water and add it directly to the pan with the sauce. Sprinkle the cheese directly on the naked pasta and toss to coat in sauce. Add up to 1 cup of the pasta water to loosen the sauce as needed. Stir in the arugula, basil, tarragon, peas and lobster meat; simmer until everything is heated through, 1 minute. Serve with additional Parmesan if desired.
SPICY LOBSTER PASTA
Steps:
- Heat the olive oil in a large skillet over medium heat. Add the chile flakes, garlic, Fresno chile and onions and cook until the onions are tender and fragrant, 5 to 7 minutes. Add the white wine and bring to a low simmer. Stir in the tomatoes, salt and pepper. Reduce the heat to low, cover and simmer until reduced slightly, 35 to 40 minutes.
- Bring a large pot of water to a boil. Add the spaghetti and cook until al dente according to the package instructions. Reserve 1/2 cup pasta water, then drain the pasta and keep warm.
- Add the lobster tails to the sauce, cover and cook for about 5 minutes (they will not be cooked through at this point). Remove the lobster to a cutting board and carefully use a knife to split open the tails on the backside. Remove the meat and coarsely chop.
- Add the lobster meat back to the sauce along with a few tablespoons of the pasta water and the spaghetti. Toss to coat, adding more pasta water if the sauce is too dry. Toss in the parsley and mint. Drizzle with a good-quality extra-virgin olive oil, if desired. Serve immediately.
OLIVE GARDEN LOBSTER SPAGHETTI

- Preparing the lobster:
- Boil water in pot large enough to hold the lobsters.
- Drop lobsters in pot and boil for 3 minutes. When finished cooking, remove lobsters from pot.
- Twist off the two front claws where they join the body.
- Using the back of a knife, crack the claws open and remove meat from tail and body and cut in half lengthwise.
- Season lobster with Old Bay, thyme and crushed red pepper.
- Preparing the sauce:
- Heat olive oil in large pot. Saute onions over medium heat until translucent, approximately 4 minutes.
- Add garlic and saute another minute, add wine and sherry, salt and pepper.
- Add lobster. Bring to boil, cook for 4 minutes.
- Remove lobster meat from sauce and set aside, cook another 4 minutes.
- Add cream and bring to a boil for 7 minutes. Strain sauce and add liquid back to the pan. Add spinach and tomatoes and butter and bring to a boil.
- Add lobster to reheat.
- Preparing Lobster Spaghetti entree: Partly coat pasta with sauce, transfer to large bowl (or individual dishes), top with lobster and remaining sauce.

LOBSTER PASTA
Steps:
- Bring a large pot of water to a boil. Add the lobster and cook for 6 to 8 minutes, until bright red.
- As soon as the lobster starts cooking, melt 3 tablespoons of butter in a large skillet over medium heat. Add the onion and 3 cloves of garlic. Cook and stir just to release the liquid. Do not let them brown.
- When the lobster comes out of the pot, place it on a cutting board and use a big knife to cut it in half lengthwise. Place the halves meaty side down into the skillet with the onion and garlic. Cook for about 3 minutes.
- Bring another pot of water to a boil and season with a little salt. Add the spaghetti and cook for 8 minutes, or until tender. If you want to save time and a pot, you could boil the pasta in the lobster water since it is already boiling, just add salt.
- Add the tomatoes to the skillet and turn the heat up to high to bring to a boil. Add the olive oil, salt, pepper and cinnamon. Cook, stirring constantly for 5 to 7 minutes. Slowly pour in the cream, stirring constantly. The sauce will become a nice pink color. Turn the heat down to medium-low. Keep warm, stirring occasionally until the pasta is done.
- Drain the spaghetti and place on a large serving plate. Stir in the remaining butter and garlic. Pour the tomato sauce over the spaghetti and arrange the two lobster halves in the center. Sprinkle all over with parsley and serve.

- Bring very large pot of salted water to boil. Add lobsters. Boil until cooked through, about 12 minutes (or cook in batches, if necessary). Using tongs, transfer lobsters to large rimmed baking sheet. Remove meat from tail and claws; place meat in medium bowl. Remove any roe from bodies and place in small bowl. Cover and chill meat and roe (if any). Remove tomalley (green matter) from bodies and discard. Reserve bodies and shells.
- Heat oil in heavy large pot over high heat. Add reserved lobster bodies and shells. Sauté 3 minutes. Reduce heat to low. Add tomato paste; stir 3 minutes. Stir in tomatoes, wine, vinegar, garlic, tarragon, thyme, and parsley. Add cream; boil 2 minutes. Reduce heat to medium-low. Simmer just until lobster flavor infuses cream, stirring occasionally, about 20 minutes. Strain sauce into large bowl, pressing on solids to extract as much liquid as possible. Discard contents of strainer. (Lobster and sauce can be prepared 1 day ahead. Cover separately and chill.)
- Transfer sauce to heavy large saucepan. Cut lobster meat into bite-size pieces; coarsely crumble roe, if using. Add to sauce. Gently rewarm over low heat, stirring occasionally.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain; return pasta to pot. Add sauce; toss over medium-high heat until sauce coats pasta, about 4 minutes. Season with salt and pepper. Transfer to large shallow bowl and serve.
SPAGHETTI WITH LOBSTER POMODORO

- Bring a large pot of salted water to a rolling boil. Working one at a time, cook lobsters 3 minutes, then transfer to a large bowl of ice water. Let cool just until you can comfortably handle them, about 1 minute, then twist off claws where the knuckles meet the body and return them to pot of boiling water. Cook 2 minutes (leave bodies in ice water). Add claws back to ice water and let both claws and bodies cool completely. (The lobsters are intentionally undercooked at this point but will finish cooking in the sauce.)
- Remove bodies and claws from ice water. Twist tails off bodies with your hands; discard heads (you won't get enough meat to make it worth your time). Working with 1 tail at a time, place on a cutting board and, using a chef's knife or cleaver, cut lengthwise all the way through tail in one motion. You should now have 2 even halves. Remove any tomalley or eggs from tails and discard. Remove meat from shells; discard shells. Using the back of a cleaver or a lobster cracker, crack claws on all sides and pick out meat; discard shells. Cut tail and claw meat into bite-size pieces. Place in an airtight container; cover and chill until ready to use.
- Heat oil and ghee in a large skillet over medium. As soon as ghee is melted, add onion and a pinch of salt and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook, stirring occasionally, until garlic is very soft, about 5 minutes. Add basil and as soon as it is wilted, add the tomatoes, crushing well with your hands as you go. Bring to a gentle simmer and cook sauce until thick and flavors have melded, 20-25 minutes. Season sauce with salt and pluck out basil.
- Meanwhile, cook pasta in another large pot of boiling salted water, stirring occasionally, until very al dente (about 1 minute less than package directions).
- Using tongs, transfer pasta to skillet with sauce, then add nduja and a splash of pasta cooking liquid and reduce heat to medium-low (high heat can cause the sauce to break). Cook, tossing gently and adding splashes of pasta cooking liquid as needed to get sauce to cling tightly to pasta, until sauce and nduja are combined, about 1 minute. Taste and season pasta with salt if needed.
- Add chilled lobster meat to pasta and cook, tossing gently, just until lobster meat is warmed all the way through, about 2 minutes.
- Divide pasta among bowls and top with tarragon and parsley leaves.
- Lobster can be cooked 1 day ahead; keep chilled. Tomato sauce can be made 3 days ahead. Let cool; cover and chill. Reheat over medium before using.
