- In a large skillet, saute onions and celery in butter until tender. Add chicken and water; heat through. Remove from the heat. Stir in the soup, sour cream, water chestnuts and almonds. , Pour into eight greased 1-1/2-cup baking dishes. Sprinkle with cracker crumbs. Bake, uncovered, at 400° for 20-25 minutes or until bubbly.

- Place the flour, salt and pepper in a large resealable plastic bag; add chicken and shake to coat. In a large skillet, brown chicken in oil over medium heat for 3-1/2 to 4 minutes on each side. Remove and keep warm. , In the same skillet, saute the onion, mushrooms and green pepper until crisp-tender. Stir in the ketchup, water and sherry or broth. Add chicken; cook, uncovered, over medium heat for 14-16 minutes or until juices run clear and sauce is thickened. Serve with rice.

- Preheat oven to 350°.
- While oven is heating up wash chicken pieces.
- Sprinkle each piece of chicken with red pepper flakes and course ground salt, use a little or a lot according to your taste.
- Allow chicken to sit on counter to absorb salt and pepper until oven is hot.
- Drizzle olive oil in bottom of baking dish.
- Place single layer of chicken in baking dish, skin side up.
- Gently spray each piece with a little non-stick cooking spray.
- Bake at 350° in middle rack for 1 hour to 1 hour and 15 minutes until done and nicely brown.
- Remove from oven, immediately squeeze lime juice over chicken and let it rest for 5 or 10 minutes before serving.

This is one of my newly adopted recipes. This is Mermaid's original description: The most tender, juicy chicken anywhere. My mom has made this for years. Great with baked potatoes and veggie.

- Preheat oven to 325.
- Place 1 tablespoon oil on the bottom of glass pan.
- Thoroughly clean chicken, removing all excess from cavity.
- Put 1 tablespoon oil on a paper towel and lightly rub the chicken down with oil Salt and pepper the skin.
- Insert 1 tablespoon butter, garlic and some chopped onion into cavity.
- Place the chicken on it's back and insert one tablespoon of butter between the skin and the breast, for each breast.
- (You have to kind of pull the skin a little to get the butter underneath it. This is what causes the chicken to be so tender and juicy.) Cook for approx 2 hours, basting every 30 minutes if possible.

- Boil the macaroni/noodles with a pinch of salt and a teaspoon of oil. When almost done, remove from fire, wash with cold water and keep aside, spread on a plate. Cut the mushrooms in quarters and keep aside. Heat one tablespoon butter in a pan and add the mushrooms. Saute for 5-6 minutes, remove from fire and keep aside. Cut the chicken in strips. Add salt, pepper, a little flour and ½ tsp oil. Mix well.
- Take a deep bottomed pan. Add 1 1/2 tsp oil in it. Saute the chicken pieces on slow fire till done. Remove from the pan and keep aside. You might need to cover the chicken for 2-3 minutes if you want to accentuate the cooking process
- In the same pan, heat butter, add 1 ½ tsp flour. Keep stirring till it is pink in colour but not brown.
- To this flour, add the sauteed mushrooms, chicken, pasta, salt and pepper. Mix well. Take this out in a serving dish. Pour the cream on it. Add chicken stock, lemon juice, oregano and cheese.
