- Beat pudding mixes and 3-1/2 cups milk in large bowl with whisk 2 min. Let stand 5 min.
- Arrange 11 wafers on bottom and up side of 2-qt. serving bowl; drizzle with 1 Tbsp. of the remaining milk. Add layers of 1/3 each of the bananas and pudding. Repeat layers twice. Cover with COOL WHIP.
- Refrigerate 3 hours.

LOW-CAL NO-EGG HOMEMADE BANANA PUDDING
This tastes to me like banana cream pie. I use raw honey to sweeten to get the nutrients of the bee pollen, but you can use whatever. Of course, since there's no egg or gelatin in it, it's a bit thin, but if that doesn't bother you, this is a great (and quick) custard-like dessert!

- Make pudding according to directions on box for pie filling, but do not let set. Mix in Cool Whip & Eagle Brand. Slice bananas into desired thickness. In a large bowl, starting with pudding mixture, layer pudding, then cookies, then bananas. Repeat until all pudding mixture is used and top with cookies. Cover & refrigerate 3-4 hours until set.

- In large bowl, beat milk and pudding mix with electric mixer on low speed until well mixed; beat in yogurt. Fold in whipped topping.
- Place 24 vanilla wafers in a single layer in ungreased 13x9-inch (3-quart) glass baking dish. Spoon half of the pudding mixture over wafers. Place 6 sliced bananas over pudding mixture. Spoon remaining pudding mixture over bananas. Arrange remaining 24 vanilla wafers over top of pudding.
- Cover; refrigerate at least 3 hours but no longer than 8 hours. Just before serving, garnish with additional banana slices.

- Heat the butter in a pot over medium heat until foamy. Add the banana and sugar and cook, stirring occasionally, until it turns a light brown and there's a nutty aroma, about 3 minutes. (You can cook it further if you want a deeper, richer flavor, but be careful the caramel doesn't burn.) Add the corn starch and salt and cook for 1 minute more.
- Slowly whisk in the milk, bring to a boil, reduce to a simmer and cook until the custard thickens a bit, 3 to 5 minutes. Take off the heat and stir in the vanilla and lemon zest. The pudding will still appear fairly liquid at this point, but don't worry, it will set up more as it cools.
- Transfer the pudding to a separate container and let cool at room temperature for 20 to 30 minutes. Give it a stir, press some plastic wrap on top of the pudding so that it doesn't form a skin, and then refrigerate the pudding until cooled and thickened, at least 4 hours or so.
- At this point the pudding is ready to eat. You can keep it simple and just serve it in small bowls, or layer it with cookies, sliced bananas, and whipped cream if you want the more traditional look. Enjoy!
