WHITE CHEDDAR MACARONI AND CHEESE

This is the ultimate comfort food! I loved when my Mom made this for us when I was a kid. It's definitely decadent, I make it mostly for family get-togethers and it's always a hit. The sharp cheese and the breadcrumb crust make this macaroni dish unique. Enjoy!

White Cheddar Macaroni and Cheese image

Steps:

  • Preheat oven to 350°F.
  • Cook macaroni pasta per package instructions. Drain and set aside.
  • In a medium saucepan on medium heat, add butter and cook until melted.
  • Remove saucepan from heat and add flour. Whisk constantly for 1 minute.
  • Return saucepan to medium heat and add milk and stir to combine.
  • Heat mixture until Milk is hot but not boiling.
  • Chop white cheddar cheese into smaller squares (you can also grate cheese) and add to milk mixture.
  • Cook for 10 minutes or until cheese is completely melted.
  • Add Parmesan cheese and stir to combine. Cook until all cheese is melted, about 2 more minutes.
  • Add macaroni noodles to saucepan and stir to combine pasta with cheese sauce.
  • Pour into a casserole dish or a ceramic, oven-safe crock.
  • Sprinkle breadcrumbs on top of macaroni.
  • Cook uncovered for 30 minutes. Let sit for 3-5 minutes after cooking to cool.

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Bring water to a boil; cook macaroni to al dente stage according to package directions.
  • Drain well.
  • Melt butter in a saucepan over medium-low heat.
  • Whisk in flour and cook, stirring constantly, for 2 minutes.
  • Whisk in milk and continue cooking, stirring constantly, until sauce thickens, about 5 minutes.
  • Stir in salt, pepper and paprika and remove from heat.
  • Stir in 1/4 cup of the cheese.
  • Spread half the macaroni over the bottom of a lightly greased 1 quart baking dish.
  • Spread half the remaining cheese over the macaroni.
  • Top with remaining macaroni.
  • Pour sauce over the macaroni.
  • Top with the remaining cheese.
  • Bake until bubbly and lightly browned, about 20 minutes.
  • Let rest 5 minutes before serving.

Steps:

  • Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a flameproof baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the Cheddar cheese on top.

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling, salted water cook the pasta to al dente.
  • While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
  • Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
  • Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

  • Preheat the oven to 450 degrees F.
  • Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.

Mac and Cheddar Cheese with Chicken and Broccoli image

Steps:

  • Place a pot of water on to boil for macaroni.
  • Heat a medium pan over medium to medium high heat. Add extra-virgin olive oil and chicken and season with salt and pepper. Saute a couple of minutes then add onion and cook another 5 to 7 minutes until onions are tender and chicken is cooked through. Turn off heat and reserve.
  • To boiling pasta water, add pasta and salt to season the cooking water. Cook 5 minutes, then add broccoli and cook 3 minutes more or until pasta is cooked to al dente and florets are just tender.
  • While pasta cooks, heat a medium sauce pot over medium heat. Add butter and melt, then add flour, cayenne and paprika and whisk together over heat until roux bubbles then cook a minute more. Whisk in milk and stock and raise heat a little to bring sauce to a quick boil. Simmer sauce to thicken about 5 minutes.
  • Drain macaroni or pasta and broccoli florets. Add back to pot and add chicken to the pasta and broccoli.
  • Add cheese to milk sauce and stir to melt it in, about a minute or so. Stir in mustard and season sauce with salt and pepper. Pour sauce over chicken and broccoli and cooked pasta and stir to combine. Adjust seasonings, transfer to a large serving platter and serve.

  • Take one large pot and fill it with water (1/4 from the top). Add 1 teaspoon salt and 4 tablespoons cooking oil to the water, and bring to a boil. Then add the whole bag of the elbow macaroni but only cook in the boiling water for no more than 10 minutes! (The consistency should only be half way cooked.) Drain the noodles and let the sit, but do NOT rinse!
  • Sauce Mixture:.
  • Mix in large bowl, the can milk, whole milk, sugar, soup, butter, water, both the red & black pepper, and the eggs. (Beat the contents together well.).
  • Put in a 11 x 9 x 2 inch deep casserole dish or aluminum pan, in layers (In this order):.
  • 1. First the macaroni (One flat layer).
  • 2. Then the SHREDDED sharp cheddar cheese.
  • 3. More macaroni.
  • 4. Then the sauce mixture.
  • 5. Then the SLICED sharp cheddar cheese (Save one package for the top of the macaroni).
  • 6. Then repeat steps 1 through 5, until all is in the casserole dish.
  • The last step would be a layer of the SLICED sharp cheddar cheese on top. Panko topping (Optional): Melt ¼ cup butter in pan, add 1 cup panko bread crumbs, add 1 tbsp paprika, mix well, and put over the top of cheese and noodles in casserole dish. (You can also grind up Goldfish crackers as your topping.).
  • Now place the dish in a 350° preheat oven.
  • Bake for 20 minutes (Covered), and 10 minutes (Uncovered).
  • Take out of the oven and let it set for 30 minutes (for best results), before serving.

I know the ingredients sound strange but this the creamiest mac and cheese I have had. I do add more cheese but that is to your liking. I also have found the more variety of cheese the better it is. I usually use extra sharp cheddar, sharp cheddar, mild cheddar, and monteray jack.

Steps:

  • Combine all ingredients except water. Add water a little at a time if mixture is to thick.
  • Put in an oven safe dish.
  • Top with breadcrumbs.
  • Spray I Can't Believe It's Butter over breadcrumbs.
  • Cook for 20 to 30 minutes at 350 degrees until breadcrumbs are golden brown.
