Steps:
- Preheat the oven to 350 degrees F.
- Cook the macaroni until still slightly firm. Drain and set aside.
- In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
- Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
- Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
- Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
- In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
- Use a fork to crumble the gorgonzola.
- Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.
SUPER MACARONI AND CHEESE
Steps:
- Preheat oven to 350 degrees F. Generously grease a 2-quart casserole; set aside.
- Heat the oil in a large nonstick saucepan over medium heat. Add the shallots and celery and saute for 5 minutes, or until the vegetables are very soft. Lower the heat and stir in the flour until well incorporated. Whisk in the hot half-and-half and then the wine. Cook, stirring constantly, for about 4 minutes, or until the mixture has begun to thicken. Remove from the heat and beat in the cheeses, stirring until they have melted into the sauce.
- Stir in the macaroni and season, to taste, with hot sauce and salt. Pour the mixture into the prepared casserole.
- If using the Parmesan, combine it with the bread crumbs in a small bowl. Sprinkle the bread crumbs over the macaroni. Bake for 15 minutes, or until the edges are bubbling and the top is golden. Serve hot.
MACARONI AND CHEESE
Steps:
- Preheat oven to 350 degrees F.
- Bring a large pot of salted water to a boil over medium heat. Add the macaroni and cook until slightly underdone, or very al dente, about 7 minutes. Drain the pasta and return it to the pot.
- In a saucepan over medium heat, melt the butter and stir in the flour. Cook, stirring constantly, until the roux turns a very pale golden color. Add the milk and whisk well to remove any lumps. Bring to a simmer over low heat.
- Meanwhile, in a small bowl, mix together the bread crumbs, 1/4 cup of Parmesan, parsley and canola oil. Reserve.
- Add the paprika, Cheddar, the remaining 8 ounces of grated Parmesan, the cottage cheese and salt and pepper, to taste, into the milk mixture. Pour the cheese sauce over the pasta and stir to combine.
- Reserve 3 cups for the Round 2 web recipe Spicy Macaroni and Cheese Bites.
- Spray a 9 by 13-inch ovenproof baking dish with cooking spray. Pour in the macaroni and cheese and spread it evenly in the pan. Sprinkle with the bread crumb mixture and bake for about 30 minutes until the bread crumbs are toasted and golden.
BEV'S MACARONI AND CHEESE

Steps:
- Melt butter in medium saucepan.
- Stir in flour, salt, mustard and pepper until smooth.
- Remove from heat and gradually stir in milk until smooth.
- Stirring constantly, cook over medium heat until thickened (about 10 minutes).
- Remove from heat.
- Stir in 1 1/2 cups cheese until melted.
- Combine cheese mixture with macaroni in greased 2 quart casserole.
- Sprinkle remaining cheese on top.
- Bake in 375 degree oven for 25 minutes or until lightly browned.
- Makes 6 servings.

- Whisk flour into skim milk is a small saucepan.
- Place it over medium low heat.
- Added shredded cheddar cheese, margarine and salt.
- Stir often with a spoon until the cheese begins to melt.
- Reduce heat to low and simmer for 30 minutes.
- Stir the sauce with a whisk every couple of minutes so it becomes smooth and thick.
- While sauce thickens, boil macaroni according to directions and strain.
- Once cheese sauce has simmered for 30 minutes, pour pasta into a medium bowl.
- Gently stir in cheese sauce.
- Pour mixture into a loaf pan or casserole dish.
- Cover and freeze.
- When ready to eat, preheat oven to 350 F and bake macaroni for 50 minutes or until cheese begins to brown slightly.
BETTER MACARONI AND CHEESE FROM A BOX!
A little tweak on the cooking preparation makes a cheap boxed macaroni and cheese taste better and creamier and also healthier for you since there's more milk and cheese and less margarine/butter. And to top it all off, it's almost as fast as the regular way, it's just more of a technique than an actual recipe change. No more runny cheesy orange watery sauce! I made this up myself when I got sick of spending more money for the "better" macaroni and cheese for the kids, you know the kind with the "gooey" packet of cheese sauce.

- Cook the macaroni in boiling water until it's as tender as you'd like it.
- Drain the macaroni in a colander, set aside.
- In the same pan over medium heat, melt the 1/8 cup margarine, then add the cheese powder. Stir until smooth with a wire whisk.
- Add the 3/4 cup of milk, a little bit at a time, mixing it with the wire whisk, like you were making gravy, stirring constantly over medium heat. As it thickens up, add some more milk until all the milk is added. Bring the mixture up to the point of boiling so that it's thick. Then add the cheese and whisk again until smooth and melted.
- Now remove from heat and add the drained macaroni. You're ready to serve and your macaroni will be creamy instead of that yellow runny stuff around your noodles.

- Preheat oven to 400 degrees F (200 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
- Melt 1/4 cup butter in a large saucepan over medium heat. When the butter starts to foam and bubble, stir in the flour; cook on medium heat until flour just begins to turn pale yellow, 3 to 4 minutes. Add thyme, cayenne pepper, and white pepper; cook and stir another minute, then whisk in 1 cup of milk until smooth. Pour in remaining milk and whisk again. Bring the sauce just to a simmer.
- Stir in nutmeg, Worcestershire sauce, and salt; simmer on medium-low heat until thickened, about 8 minutes, whisking often. Turn heat off, then add 2 1/4 cups of Cheddar cheese; stir until melted and combined. Add Dijon mustard.
- Transfer the macaroni into a casserole dish, then pour in the cheese sauce; stir to thoroughly combine sauce with pasta. Mix panko bread crumbs and 1 tablespoon melted butter in a small bowl, and sprinkle crumbs on top of macaroni and cheese. Sprinkle remaining 3/4 cup of Cheddar cheese on top.
- Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.

- Preheat the oven to 350°F. Lightly butter a 9- by 13-inch baking dish.
- In a small saucepan over moderate heat, melt 3 tablespoons of the butter. Place the panko bread crumbs in a small bowl, drizzle with the melted butter, and toss to combine. Add a handful of the grated cheese to the bowl, toss to combine, and set aside.
- In a large pot of boiling salted water, cook the elbow macaroni until al dente. Drain the noodles, without rinsing, then return them to the pot they were cooked in.
- In a small saucepan over moderate heat, warm the milk just until it starts to steam and form tiny bubbles around its edges-be careful not to let the milk come to a boil. Remove from the heat.
- In a medium saucepan over moderate heat, melt the remaining 3 tablespoons of butter. Add the flour and use a flat-edged wooden spoon or heat-safe rubber spatula to stir the mixture together, scraping the bottom of the pan to prevent burning, just until it starts to turn a light brown color, about 3 minutes. Slowly add the warm milk and stir constantly until the sauce thickens, about 3 minutes. Remove from the heat and stir in the dry mustard, salt, and pepper. Add the remaining grated cheese and stir until it's completely melted. Adjust the seasoning to taste. Pour the cheese sauce over the cooked elbow macaroni and gently stir to coat the noodles in the sauce.
- Pour the macaroni and cheese into the prepared baking dish and top with the panko-cheese mixture. Bake until light golden brown and bubbling, about 30 minutes. Serve hot. DO AHEAD: Macaroni and cheese can be made ahead, put into the baking dish, cooled completely, and kept, covered in the refrigerator, for 2 days. Do not add the bread crumbs until ready to bake. (Chilled Macaroni and Cheese may take longer than 30 minutes to be fully cooked.)
EASIEST & CHEESIEST MACARONI AND CHEESE
This is my personal recipe. I love Stouffer's mac and cheese and I decided to take a chance at making my own. This is pretty close and in a house of picky eaters, the first time I made it--it was gone in minutes. I have a rather large family, so you can halve the recipe to make for a smaller family. Also the larger recipe is good if you want to serve as a meal.

- Put macaroni to boil.
- In a medium pot heat butter and sauté onions.
- Add milk, flour, salt and pepper; bring to a rolling boil.

- After cheddar has dissolved, add the mozzarella, stirring while adding.
- Drain macaroni.
