SPINACH AND RICOTTA DUMPLINGS

Spinach and Ricotta Dumplings image

Steps:

  • Bring a large, wide pot of salted water to a simmer. Put the spinach in a large bowl and separate it with your hands. Add the ricotta, 3/4 cup parmesan, the flour, eggs, 3/4 teaspoon salt, 1/4 teaspoon pepper and the nutmeg. Mix with a fork to form a slightly sticky dough.
  • Spread some flour on a plate. Scoop out heaping tablespoonfuls of the spinach-ricotta mixture and roll into about 24 loose balls using floured hands. Gently roll the balls in the flour.
  • Bring the marinara sauce to a simmer in a large skillet over medium heat. Whisk in the butter.
  • Meanwhile, gently lower the dumplings into the simmering water and cook until they rise to the surface and are firm, about 5 minutes. Remove the dumplings with a slotted spoon, letting the water drain off, and add to the sauce. Gently toss to coat, then transfer to plates and sprinkle with the remaining 1/4 cup parmesan. Serve with bread.

Steps:

  • Heat the oil in a large frying pan over a high heat and wilt the spinach, about 2-3 mins. Tip the spinach into a colander and press out any excess liquid using the back of a spoon. Leave to cool completely. Squeeze out any remaining liquid with your hands, then finely chop the spinach.
  • Tip the chopped spinach into a bowl with the ricotta, breadcrumbs and parmesan. Add the egg and semolina or flour. Season and grate over some nutmeg. Stir to form an evenly combined, sticky mixture.
  • Put a couple tablespoons of flour on a large tray and shake gently to spread the flour out. Spoon around ½ tbsp of the spinach mixture onto the floured tray and roll into a ball. Repeat with the rest of the spinach mixture, transferring the balls to a second clean baking tray as you go.
  • Heat the oven to 140C/120C fan/gas 1. Bring a large pan of salted water to the boil. Drop in the malfatti (you may need to do this in batches) and simmer for 2 mins, or until they float to the surface. Scoop the malfatti out with a slotted spoon and drain well. Transfer to an ovenproof serving dish and keep warm in the oven.
  • Make the sage butter by melting the butter in a small pan. Add the sage leaves and fry gently, stirring often until crisp. Pour the sage butter over the malfatti and top with more grated cheese.

  • Wash your spinach and boil in a little salted water for about 8 minutes, then drain and leave to cool a bit, wring out well and chop finely.
  • Peel the garlic. Heat the olive oil in a frying pan. Add the garlic, once it starts to soften add the tomato passata and basil leaves. Simmer for 15-20 minutes. Add salt and pepper to taste and remove the garlic cloves when the sauce is ready.
  • Place some baking paper on a tray and sprinkle with flour. Take about a flat tablespoon full of gnudi mixture and form into a ball. You can use wet hands to make the balls. I use an ice-cream/melon scope or a tablespoon to get the same quantity of gnudi mixture for each ball. Place the gnudi on the tray and roll a little to cover each ball slightly in flour.
  • If you are serving with sage butter while the water is boiling and the gnudi are cooking, melt the butter in a skillet or frying pan. Add the sage leaves to the butter and cook until they start to crisp. Both the butter and the sage need to be a little brown but not burnt. Plate the gnudi and pour over the sage butter. Add some grated parmesan and black pepper if required.
