  • Preheat oven to 350°. Grease a 13x9-in. baking pan. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Batter may appear curdled. If desired, beat in flavoring. In another bowl, whisk flour, milk powder, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Transfer batter to prepared pan. Bake 18-22 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., In a large bowl, beat butter until creamy. Beat in confectioners' sugar and cocoa alternately with milk until smooth. Spread frosting over cake; sprinkle with crushed malted milk balls.

Speckled Egg Malted Milk Cake image

Steps:

  • Heat oven to 350°F. Spray 3 (8-inch) round cake pans with cooking spray; set aside.
  • In large bowl, stir together cake mix and malted milk powder with whisk. Add remaining Cake ingredients; beat with electric mixer on low speed until well combined. Divide batter evenly among pans.
  • Bake 22 to 28 minutes or until cakes spring back when touched lightly in center. Cool cakes in pans on cooling racks 5 minutes. Turn cakes out onto cooling racks; cool completely, about 30 minutes. Level cakes using large serrated knife or cake leveler, if needed.
  • To make Frosting, in large bowl, beat softened butter and powdered sugar with electric mixer on low speed until incorporated; beat on high speed 3 minutes. Add vanilla and salt; beat 1 minute longer. Add blue food color 1 drop at a time, beating until a light blue color is achieved.
  • Fill and frost cooled cake. Refrigerate frosted cake 1 hour or until frosting is dry to the touch.
  • In small condiment bowl, mix baking cocoa and vanilla. Load unused (new) stiff-bristle paint brush with cocoa mixture. Using fingers, flick loaded brush bristles toward cake creating a splatter pattern. Re-load brush; cover entire cake with chocolate speckles. Refrigerate cake 30 minutes.
  • To make Phyllo Nest, heat oven to 375°F. Butter 1 muffin cup in regular-size muffin pan. Tear off 1/3 cup portion of kataifi; place in muffin cup in a circular nest shape. Gently brush phyllo nest with melted butter. Bake 15 minutes or until phyllo is golden brown around edge. Gently remove nest with fork; cool on cooling rack. Attach cooled nest to cake with dot of frosting. Place 3 speckled egg candies inside nest.
  • Before serving, bring cake to room temperature. Store cake loosely covered with plastic wrap.

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease two 20cm round cake tins and line with baking parchment. Heavily grease a 16cm hemisphere cake tin and stand on a ramekin on a baking sheet to hold it steady.
  • First, make the sponges. Using electric beaters or a tabletop mixer, beat the butter and sugar together until pale and fluffy. Pour the eggs in, one at a time, giving the mix a thorough beating before adding the next. If the mix starts to look curdled, add 2 tbsp of the plain flour. Beat in the yogurt.
  • Mix both the flours together, adding ½ tsp salt, and slowly beat into the batter, followed by the malt extract (or vanilla paste) and milk. Spoon half the mixture into one of the 20cm tins, and split the remaining half between the other 20cm tin and the 16cm hemisphere. Bake the smaller amount of cake batter in the 20cm tin and the 16cm tin for 1 hr, and the larger amount for 1 hr 20 mins or until a skewer comes out clean when inserted into the middle of the cakes. Cool in the tin for 10 mins before turning out onto a wire rack to cool completely. Can be frozen at this stage for up to three months.
  • Meanwhile, make the buttercream by beating all the butter and half the icing sugar together using an electric whisk or tabletop mixer. Add the rest of the icing sugar once incorporated, followed by the malt extract (or vanilla paste) and milk. Set aside until ready to use.
  • To assemble, halve the largest 20cm cake horizontally so you are left with two equal-sized sponges the same size as the remaining 20cm cake. Put a blob of buttercream onto a 23cm cake board (or cake stand) and spread using a palette knife. Stick one of the sponges to the board. Spread a thick layer of buttercream on top of the cake and sandwich another sponge on top. Spread over another thick layer and sit the final sponge on top. Using a palette knife, coat the entire cake in a thin layer of buttercream and smooth the sides and top carefully, working around the whole cake, scraping off any excess icing. Chill in the freezer for 10 mins or in the fridge for 1 hr until set.
  • Meanwhile, put the hemisphere sponge on the smaller cake board and halve horizontally. Fill the middle with some buttercream, sandwich with the top and coat the entire cake in a thin layer of buttercream. Chill in the freezer for 5 mins or in the fridge for 30 mins.
  • Take the larger cake out of the fridge/ freezer and coat in another layer of buttercream. Take care when covering this time, as you want a smooth finish to the cake. Running the palette knife under hot water helps smooth over the sides once it is coated completely. Chill again for 5 mins in the freezer.
  • Cover the hemisphere sponge with buttercream and smooth over with the palette knife. Carefully lift the hemisphere onto the centre of the cake (as the sponge has been frozen you shouldn't leave finger marks). Press down lightly to set on the buttercream. If there is a gap around the rim, use a small palette knife to fill in with any remaining buttercream. Chill for 10-15 mins.
  • Meanwhile, make the eyes and nose using coloured fondant. Roll the black fondant into two balls for the eyes, and five smaller balls for the mouth. Roll the orange fondant into a carrot shape. Leave to set and harden slightly while you make the drippy ganache.
  • Make the drippy ganache by mixing the chocolate and oil and microwaving for 30 secs, stirring and then giving it another 30 secs until melted. Transfer to a squeezy bottle, then pour down the edges of the round cake to create the melting snow effect.
  • To finish the cake, stick the eyes to the head using a little remaining buttercream. Poke the wooden dowel into the carrot nose, leaving some poking out to stick it to the face. Stick the five small black fondant balls for the mouth and the chocolate buttons down the front of the cake for buttons. Insert the Mikado sticks on either side for the arms. Bring the cake to room temperature before serving.

  • Heat oven to 350°F (325°F for dark or nonstick pan.) Spray 13x9-pan with baking spray with flour.
  • In large bowl, stir together cake mix and 3/4 cup malted milk powder. Beat in water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter into pan.

  • Heat the oven to 180C/160C fan/gas 4. Oil a 20 x 30cm traybake tin and line with baking parchment. Whisk the oil, sugar, eggs and milk together in a large bowl. Sieve over the flour, cocoa, malted milk powder and bicarbonate of soda, then fold the dry ingredients into the wet until well-combined. Pour the batter into the prepared tin and bake for 30-35 mins until the sponge has risen and springs back when gently pressed - a skewer inserted into the middle should come out clean. Set the tin on a wire rack and leave to cool completely.
  • While the sponge cools, make the buttercream. Beat the butter, icing sugar, malted milk powder, vanilla and 1 tbsp boiling water from the kettle together using an electric whisk until pale and fluffy. Spoon the buttercream over the cooled cake and gently spread to the edges using a spatula or palette knife. Scatter over the bashed chocolate balls, then decorate with the chocolate bunnies and halved chocolate eggs before serving. Will keep in an airtight container for up to three days.

Steps:

  • Bake the cake:
  • Preheat the oven to 180°C (350°F). Grease three 18cm (7 inch) cake tins and line with parchment paper.
  • Put the butter, sugars, flour, baking powder, malt powder and salt into the bowl of a stand mixer fitted with the paddle attachment. Mix on low until all the butter is rubbed into the dry mixture and it has a sandy texture. Alternatively, rub the butter into the dry ingredients by hand, as if you were making pastry.
  • In a small jug, beat together the milk, eggs and vanilla. Pour the mixture down the side of the bowl into the dry ingredients and beat until everything is mixed together. When all the liquid has been added, beat on a high speed for two minutes until it is well combined and smooth. Alternatively, you could use an electric hand-held whisk.
  • Divide the mixture evenly between the prepared tins and bake in the preheated oven for 25-30 minutes until golden brown. The cake will look slightly darker than you might expect with the added malted milk powder, so be more vigilant in checking that it is ready.
  • Make the buttercream:
  • Heat the milk and malted milk powder in a small saucepan. Whisk until all the lumps of powder have dissolved and the mixture has thickened slightly. Set aside to cool. Beat the butter in a large bowl until smooth, then gradually add the icing sugar and cool malted milk paste. Use an electric hand-held whisk to beat the buttercream for 5-10 minutes until light and fluffy. It should hold its shape but still be fairly soft.
  • Assemble the cake:
  • To assemble the cake, stack the bottom two layers on top of each other and use a circular 9cm cutter to remove the middle. Press through both layers at once to make sure the holes line up.
  • Put the bottom ring on a cake stand and cover the top with a layer of buttercream using a palette knife. Try not to get icing too close to the middle, because moisture on the sweets will cause them to become sticky.
  • Put the second ring on top of the first and fill the hole with milk bottle sweets. Make sure it is filled to the same level as the sponge or the top sponge will cave in. Cover the second ring with buttercream then add the final sponge. Thinly cover the whole cake with some of the buttercream to trap any crumbs, then chill for a minimum of 30 minutes.
  • Cover the cake with the remaining buttercream, placing a large dollop on the top to create a swirl. Decorate using more milk bottle sweets and coloured paper straws.
