- Preheat the oven to 375 degrees F.
- Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
- Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.
- Meanwhile, in a large bowl, whisk together the eggs, half-and-half, seasoned salt, and black pepper. Melt the remaining 2 tablespoons butter in a second large skillet. Add the whisked eggs and cook, stirring gently, until the eggs are set.
- To assemble the burritos, stack the tortillas on a paper towel and microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, top with a little caramelized onions, 1 sausage link, 3 tater tots, a little salsa, and about 2 tablespoons cheese per burrito. (You can also leave some without cheese if preferred.) Tuck in the sides and roll the tortilla closed. Wrap in a foil sheet. Repeat with the rest of the ingredients. Keep warm in the oven in foil pans until ready to serve. Serve with salsa and the hot sauces.
BREAKFAST QUESADILLA WITH MAPLE SAUSAGE AND CHARRED POBLANOS
Burritos seem to have bullied quesadillas out of the running for Mexican-inspired breakfast foods. Well, not anymore, I say! Fold your favorite ingredients inside a flour tortilla for a scrambled spin on breakfast. Inside my quesadilla you'll find smoky, charred poblanos and creamy Monterey Jack cheese. For a double dose of heat, go for spicy sausage and jalapeños. For milder palates, opt for the sweet links instead.

- Preheat the oven to 425 degrees F.
- On a baking sheet, drizzle the poblano peppers with 1 tablespoon olive oil and season them with salt and pepper. Roast for 15 minutes, flipping them once halfway through so they are charred side up for the last half. When the peppers are cool enough to handle, slice off their tops, split them down the middle, scrape out the seeds, and roughly chop the flesh.
- Reduce the oven temperature to 250 degrees F.
- In a small skillet, heat the sausages in the remaining 1 tablespoon olive oil over medium heat until fully warmed through and lightly browned on all sides, 5 to 8 minutes. Roughly chop the sausages.
- In a bowl, season the eggs with a pinch of salt and pepper and whisk until they are light and airy.
- In a large nonstick skillet, heat the butter over medium-high heat. When the butter begins to foam and sizzle, pour in the eggs. As the outside begins to cook, lift up the eggs with a heatproof spatula so that the runny center flows to the side of the pan. When the bottom is cooked-about 30 seconds-carefully flip the eggs so that they're now top-side down. If you're not comfortable flipping the eggs, scramble them with a spatula until they're soft and fluffy, 15 to 20 seconds after the bottom is cooked. Immediately remove the eggs from the heat and split them down the middle so you have two half-moons.
- On one half of each tortilla, layer the poblanos, eggs, sausage, spinach, and Monterey Jack cheese, and sprinkle with salt and pepper. Fold the tortillas over to make a quesadilla shape.
- In a large skillet, heat 1 tablespoon of the neutral oil over medium heat. Add one quesadilla and cook until golden brown and crispy, 2 to 3 minutes per side. Place it on a baking sheet to keep warm in the oven. Prepare the second quesadilla with the remaining ingredients.
- When both quesadillas have been cooked, slice them into triangle and serve with the Greek yogurt or sour cream. Drizzle with hot sauce and sprinkle with cilantro or parsley if desired.
MAPLE BREAKFAST SAUSAGE

MAPLE BREAKFAST SAUSAGE
This classic recipe will come together in the time it takes to make a frittata or a stack of pancakes for brunch. You could also try frying the patties in a cast-iron pan alongside eggs in a hole. As the maple-and-sage-tinged fat renders out of the sausage, the bread will thirstily absorb it. You might even want to drizzle a tiny bit more syrup over the whole thing as you sit down to eat, so that each bite of sausage, bread and runny yolk has the perfect blend of savory and sweet. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless hockey pucks. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon. - Line a baking sheet with parchment paper; set aside.
- Finely crumble the sage into a large bowl. Add salt, black pepper, nutmeg, coriander and cayenne to the sage, and stir to combine. Add pork and syrup to the spice mixture.
- Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
- Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil to the pan. and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture, and mix to combine.
- Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
- To cook, wipe out cast-iron pan, and return it to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
- Drain sausages on paper towels. Serve hot.

- Preheat oven to 350*.
- In large skillet, melt butter over medium-high heat. Add potatoes & onion. Cover and cook until onions are caramelized, stirring frequently.
- In the meantime, brown maple sausage in a separate skillet. Once browned, drain & rinse sausage to remove excess fat.
- Combine potato mixture with sausage in 9x13 pan. Cover with aluminum foil and bake for 25-30 minutes.
- Remove foil and sprinkle cheese over top of casserole.
- Return to the oven, uncovered, for 5-10 minutes until cheese is melted.
- Serve while hot.
