- Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
- Blend together lime, salt and sugar in a small blender or mini food chopper.
CLASSIC MARGARITA

- Combine 1 3/4 cups silver tequila, 1 cup fresh lime juice, 3/4 cup light agave syrup and 1/3 cup water in a pitcher; stir. (You can refrigerate the drink up to 1 day ahead.) Serve over ice in salt-rimmed glasses; garnish with lime wedges.
PERFECT MARGARITA
You can adjust the strength of this drink by changing the amount of lime juices used, but it is important to keep the two amounts of lime juice equal.

- Moisten the rim of a margarita glass with lime juice; dip into coarse salt or hold inverted& sprinkle coarse salt over the outside of the rim.
- Place cubes in a cocktail shaker and add the rest of the ingredients (use equal amounts of fresh lime juice and sweetened lime juice).
- Shake briskly.
- Pour into glass, garnishing with a lime slice or wedge (if desired) and serve.

THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

MARGARITA CHEESECAKE
This dessert takes inspiration from the classic Tex-Mex cocktail -- right down to the salt on the rim of the glass (in this case, a salted-pretzel crust). Tequila and orange-flavored liqueur make this ultra-creamy cheesecake an adults-only treat (or replace the liquor with lime juice for an alcohol-free version).

- Crust: Preheat oven to 375 degrees, with rack in center. In a food processor, pulse pretzels until fine crumbs form (you will have a little more than 1 cup). Add sugar and melted butter; process until combined. Press evenly in bottom and 1 inch up sides of a 9-inch springform pan. Bake until golden brown, about 9 minutes. Transfer to wire rack to cool completely.
- Filling: Reduce oven temperature to 325 degrees. Wrap exterior of springform pan with a double layer of foil. Set a kettle of water to a boil. In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese on medium-high speed until fluffy and smooth, about 3 minutes, scraping down sides of bowl as needed. Reduce speed to medium. Mix in sour cream, sugar, Grand Marnier, tequila, lime zest, and salt; beat until well incorporated. Add eggs, one at a time, beating well after each.
- Pour cream-cheese mixture over cooled crust (filling will come up higher than crust). Set springform pan in a roasting pan; carefully pour in enough boiling water to reach halfway up side of springform pan.
- Bake on center rack until cake is set and slightly firm to the touch, about 65 minutes. Transfer springform pan to a wire rack and remove foil; let cool completely. Refrigerate until chilled, at least 6 hours or up to overnight. Run a knife around edge of cake to loosen before unmolding. Garnish top of cheesecake with lime slices.

THE REAL CADILLAC MARGARITA
There is another recipe for a Cadillac on this site, it is not the real deal. The other recipe has you adding sweet & sour mix into it, but a Cadillac should never, EVER contain sweet & sour or any other "mix" as it is a purists' margarita. If you were a bartender and had someone ask you for a Cadillac, I can assure you that if you put sweet & sour in it, they would not be returning to your bar. This is the real deal Cadillac, served in a martini glass, shaken like a martini.

- Pour a thin line of kosher salt on a plate. Rub lime slice around outside rim of martini glass to wet rim with lime juice. Turn martini glass sideways and roll the rim in the line of kosher salt.
- Fill cocktail shaker with ice. Add fresh lime juice, tequila, and triple sec. Shake very well.
- Pour shaken mixture into the salt-rimmed martini glass, leaving all ice in the shaker.
- Slowly pour the 1/2 ounce of Cointreau, Grand Marnier, or Gran Gala on top.
- Garnish with lime slice on rim and lime peel twist/curl in drink.
- Enjoy the purists' margarita. :).

- Preheat oven to 375. Cook macaroni as directed on the package. While macaroni is cooking, prepare the sauce.
- Heat olive oil in a medium saucepan over low heat. Add garlic and cook 1-2 minutes, or until garlic is fragrant. Whisk in flour, salt and pepper and cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute. Set aside.
- Drain pasta and mix with the drained diced tomatoes. Place half of the macaroni in an ungreased 2-quart casserole dish. Sprinkle with half the salt, pepper, basil and cheese. Repeat with remaining macaroni, salt, pepper, basil and cheese. Pour sauce over macaroni. Cover and bake for 30 minutes. Uncover and bake 15 minutes longer. Serve with fresh basil.
