MARQUIS POTATOES
After responding to Pam's recipe request at Zaar, I found this on the 24hourmom.com website. It sounds delicious and I hope it was what Pam was looking for!!! I suspect that since Pam's was on a buffet, all the ingredients were just mixed together, not made into nests as this recipe calls for. I also guessed on the prep/cooking time.

Steps:
- Peel and cut potatoes into small chunks Boil in salted water till fork tender Meanwhile, heat oil in a saucepan Add green onions and saute 30 seconds Add tomatoes and saute about 10 minutes or until moisture has evaporated Set aside.
- Drain potatoes and cool for just a bit.
- Turn on broiler Grease baking sheet Mash potatoes with 2 egg yolks, butter and milk.
- Season with salt and pepper Spoon potatoes onto pan into six little nests with indentions in the center.
- To make this fancy, use a pastry bag with a large star tip.
- Beat remaining egg with water and brush over potatoes.
- Broil 5 minutes or until golden brown.
- Spoon tomato mixture into potatoes, sprinkle with parsley and serve.

- Put the potatoes in a pan and cover with cold water. Place over medium heat and bring to the boil. Simmer until fork-tender, 20 to 25 minutes, then drain.
- Smash the potatoes with a potato smasher for a minute or so to break them down a little. Add the butter, sour cream and heavy cream, then mix thoroughly. Stir in the bacon, green onions and grated cheese. Season to taste. Serve hot, topped with some extra green onions for garnish.

- Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. - Place almonds in a heat-proof bowl and cover with boiling water. Let stand for a few minutes until cool enough to handle. Slip the almonds out of their skins one by one, leaving the remaining almonds in the warm water. Drain almonds in a colander and pat dry with paper towels.
- Place almonds, confectioners' sugar, rose water, and almond extract in a food processor fitted with a metal blade and process to a paste. Scrape the sides a few times to ensure even processing. My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

- Place the potatoes into a large pot and cover with salted water; bring to a boil. Cook the potatoes at a boil for 10 minutes; drain. Set potatoes aside to cool.
- Once potatoes are cool enough to handle, slide the skin from the potatoes and discard; refrigerate peeled potatoes until completely cold, about 1 hour.
- Preheat an oven to 350 degrees F (175 degrees C).
- Grease a 9x13-inch baking dish with 1 tablespoon butter.
