Steps:

  • An hour before serving put a martini glass in the freezer.
  • When ready to serve, fill a cocktail shaker or small pitcher with ice. Add the vermouth and then the gin. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Strain the martini into the chilled glass. Add the olive and serve.

1/2 teaspoon dry vermouth
3 ounces chilled quality gin
1 or 3 green cocktail olives

DIRTY MARTINI

  • Put it in a frozen martini glass and the olive on a wooden stick.

Steps:

  • Combine the vodka, vermouth, and olive juice in a shaker with ice. Shake it up really well to break up the ice into shards. Strain into 2 martini glasses and garnish each drink with 3 black olives. Poke the olives with toothpicks as if you're bobbing for apples.

The classic martini has only two ingredients--so it's important to use the best you can afford. Store vermouth in the refrigerator to retain its flavor. Don't chill the gin or vodka or it won't get diluted enough by the ice to achieve the proper proportions (one-eighth to one-fourth water). Energetic shaking with ice is vital for a smooth/silky result. Stirring produces a crystal-clear martini but it will never get as cold as a shaken martini. Always serve martinis in a frosty-cold glass. Garnish with a pitted olive (stuffed or no).
