LYCHEE MARTINI
Steps:
- Pour can of lychee fruit into a strainer. Reserve 2 tablespoons lychee juice.
- In a shaker, add crushed ice, lychee liqueur, vodka, lime juice and reserved lychee juice.
- Shake well. Pour mixture into chilled martini glasses over a few pieces of lychee fruit from can. Add a splash of Champagne and serve.
MEXICAN MARTINIS
These are a bit labor intensive but worth it. Fresh limes and a good lime squeezer are a must.

- Moisten the edges of two martini glasses with a little lime juice, and then dip moistened edges into coarse salt. Place an olive in each glass.
- Pour remaining lime juice into a cocktail shaker, and then add tequila, orange liqueur, sweetened lime juice, and sugar. Fill shaker with ice, shake vigorously, and strain into prepared glasses.

- Heat a large, dry skillet; toast almonds, stirring, until golden-brown, about 2 minutes. Do not overcook. Remove from skillet; set aside.
- Heat water, vermouth and 2 teaspoons salt in skillet to a simmer. Add fillets; simmer until fish just turns opaque and flakes easily, about 5 minutes. Remove fillets; add salt and pepper to taste. Top with butter, almonds and parsley; squeeze lemon juice to taste.
