MASHED YAM (CAPE VERDE ISLANDS) PURE DE INHAME

Steps:
- Pre-heat oven to 375 degrees F.
- Puree the cooked yam pieces by putting them through a food mill.
- Gradually add the beaten egg, the butter, and the salt, mixing well to make sure that all the ingredients are blended.
- Spoon the mashed yam into an ovenproof cassserole, and paint the top with the beaten egg yolk.
- Place casserole in the oven for 20 minutes or until golden brown.
- Top with a few gratings of nutmeg and serve hot.

MASHED YAM CASSEROLE
I love this! You can use sweet potatoes, but I prefer yams. No sugar or marshmallows in this. The sweetness comes from a banana. Great with ham or for Thanksgiving or anytime!

Steps:
- Preheat oven to 350. Lightly spray a 2 quart casserole dish with nonstick cooking spray.
- Boil yam chunks in salted water until tender (about 10-15 minutes, depending on the size of your chunks). Drain.
- Place cooked, drained yam chunks in a large bowl. Add banana. Mash together with a potato masher.
- Add 3 tbsp butter and the sour cream. Mash to combine well. Mash in the salt, cinnamon, ginger and nutmeg.
- Place mashed mixture into prepared casserole dish. Evenly drizzle with the 1 tbsp melted butter.
- Bake uncovered, at 350 for 20 minutes or until top just begins to slightly brown.

I was tired of plain old mashed potatoes. Tried this as an alternative. Now, we eat more yams than white potatoes!

- peel and cut yams into cubes.
- boil until tender (about 30 mins).
- drain.
- add butter, sugar, cinnamon.
- mix until smooth (I use the hand mixer but my mom prefers the stand mixer).
