Very tasty meatballs full of spice and sauteed to perfection. I usually serve mine with spaghetti, but I've also served them with a BBQ sauce and rice on the side.

  • In a large bowl, mix the ground beef, croutons, sweet onion, egg, garlic, Worcestershire sauce, mustard, red pepper flakes, and Cajun seasoning. Form the mixture by hand into meatballs.
  • Heat the olive oil and melt the butter in a skillet over medium heat. Place the meatballs in the skillet, and cook, turning constantly, 20 minutes, or to desired doneness.

  • In a mixing bowl, beat together egg and 1/2 cup water.
  • Blend in the beef, bread crumbs, salt, horseradish, and waterchestnuts; do not overblend, or meatballs will end up tough.
  • Shape mixture into balls about 3/4" diameter and place on a foil lined cookie sheet.
  • Bake at 350 degrees for 30 minutes or until lightly browned.
  • Meanwhile, make sauce by mixing marmalade, garlic, soy sauce, lemon juice and water in a saucepan; heat slowly, stirring often.
  • Place cooked meatballs in a serving dish and cover with sauce; stir gently to coat meatballs thoroughly.

  • Combine pork sausage and spicy pork sausage together in a bowl using your hands. Form mixture into meatballs, about 1 tablespoon each.
  • Fry meatballs in a skillet over medium heat until browned and completely cooked through, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Transfer meatballs to a large bowl and add 1/2 of the orange juice concentrate; gently toss to coat, adding more if needed to completely coat.
  • Put meatballs in a slow cooker and add the remaining orange juice concentrate; turn on Low setting to keep warm before serving.
