Steps:
- Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
- Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

- Heat oil in a small skillet over medium. Fry rosemary until crisp, about 20 seconds. Transfer to a paper towel to drain; set rosemary oil aside.
- Mix yogurt and honey in a small bowl; season with kosher salt.
- Toss watermelon and grapefruit juice in a large bowl; season with flaky sea salt.
- Spread yogurt on a large platter. Top with watermelon and crumble fried rosemary over. Drizzle 1 Tbsp. reserved rosemary oil over (save remaining oil for another use) and sprinkle with red pepper flakes and poppy seeds.

- In a small dry fry pan, over medium, toast the poppy seeds for 2-3 minutes tossing and turning often until they are toasted.
- In the bowl of a blender, add lemon juice, vinegar, Agave, both mustards, salt and pepper and blend to combine. Then with the blender running on low, slowly add both oils until blended. Toss in the poppy seeds and pulse just to blend.
- Place the melon balls (and optional cheese), in a large bowl and pour the dressing over and toss.
- Serve immediately. Note: If you are not serving immediately, keep the fruit, cheese and dressing separate. When ready to assemble, drain off any liquid that the fruit may have given off, combine the three together and serve.
