EASY BEEF ENCHILADAS

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
- Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
- Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

- Crumble beef into a 2-qt. microwave-safe dish; add onion. Microwave, covered, on high until beef is no longer pink, 2-3 minutes; drain. Stir in 1 cup cheese, 1/4 cup enchilada sauce and green chilies., Place about 1/2 cup beef mixture off center on each tortilla. Roll up and place in a greased 11x7-in. microwave-safe dish, seam side down. Top with remaining enchilada sauce., Microwave, covered, on high until heated through, 5-6 minutes. Sprinkle with remaining cheese. Cook, uncovered, until cheese is melted, 1-2 minutes longer. If desired, serve with lettuce and sour cream.

Got this from the Mission Flour Tortilla bag a couple years ago. It's very good and quick. You can add more heat if you like with hotter salsa or picante sauce.

- Cook beef until browned; add salsa and chili powder.
- Place 4 tortillas in a 2 quart baking dish and top with half of the meat mixture. Add half of the soup. Repeat layers and top with cheese.
- Cover and microwave at 100% power until hot, about 8-10 minutes depending on your microwave.
- Serve with sour cream and tomatoes if desired.

Steps:
- Crumble ground beef into 2 quart casserole; add onion. Cover loosley and microwave on high 3 min.; stir.
- Cover and microwave until meat is firm, 2-3mins. Stir to break up meat; drain.
- Stir in cheese, sour cream, parsley, salt and pepper. Cover and reserve.
- Wrap 4 tortillas in damp cloth and microwave on high until softened, about 45 sec. Keep tortillas covered while working with the filling.
- Spoon about 1/3 cup filling in center of tortilla. Fold up.
- Place seam side down in oblong baking dish.
- Repeat with remaining tortillas.
- Prepare enchilada sauce.
- Enchilada Sauce:.
- Mix all ingredients, cover tightly and microwave on high to boiling, 4-6 min.; stir.
- Pour sauce over tortillas. Cover loosley and microwave on high until filling is hot, 7-9 minute.
- Garnish with shredded cheese. Enjoy!

BEEF ENCHILADAS
Steps:
- For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
- For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. Add 1/4 cup water, the beef bouillon, chili powder, garlic powder, black pepper and salt. Continue to cook until you have the consistency for the gravy, another 5 minutes.
- For the enchiladas: Heat a griddle or grill on medium heat. Spray cooking spray or put oil on griddle. Place tortillas on griddle until pliable for folding, about 15 seconds.
- Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
- Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.
BEEF ENCHILADAS RECIPE BY TASTY

- Preheat the oven to 350°F (180°C). Grease a 9 x 13-inch baking dish with nonstick spray.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until beginning to soften, about 5 minutes. Add the garlic, cumin, paprika, and chili powder and cook, stirring constantly, until aromatic, about 30 seconds.
- Add the ground beef and cook, breaking up with a wooden spoon, until the beef is browned and cooked through, about 5 minutes. Add the salt and black beans and continue cooking until warmed through, about 3 minutes. Remove the pan from the heat.
- Add 1 cup of enchilada sauce to the bottom of the prepared baking dish and use a spatula to spread evenly.
- Scoop ½ cup of the beef mixture onto the lower half of a tortilla, then roll up. Place the rolled tortilla seam side-down in the baking dish. Repeat with the remaining beef and tortillas, arranging in a row.
- Top with the remaining cup of enchilada sauce. Sprinkle the shredded Mexican cheese on top.
- Bake until the cheese has melted, about 10 minutes.
- Top the enchiladas with the cilantro and Cotija cheese, if desired, and serve immediately.
