SUPER EASY MICROWAVE STRAWBERRY JAM
This quick and easy recipe makes a small batch of jam that is not too sweet with fantastically bright berry flavor. When I couldn't find the original recipe from 20+ years ago, I created this simple one with just 2 ingredients. Mixture is very hot, so use care when stirring. Refrigerate leftovers if there are any! Tastes great on toast and English muffins or spoon while warm over ice cream. Blueberries can also be used in place of strawberries.

Steps:
- Place strawberries in a large microwave-safe bowl; add sugar and stir until evenly coated.
- Heat strawberries in microwave for 2 minutes; gently stir and continue cooking in microwave, stirring every 2 minutes, until thick and glossy, 6 to 10 minutes. Refrigerate jam until chilled, at least 30 minutes.

FRESH RASPBERRY SAUCE
This stuff is so beautiful and delicious, you and your Valentine may not even need the cake. This will absolutely work even if you use frozen raspberries, but nothing compares to the flavor of the sauce if you can somehow find and use fresh raspberries.

Steps:
- Combine raspberries, sugar, water, and lemon juice in a saucepan over medium heat; cook and stir until raspberries break down, sugar dissolves, and sauce is heated through, 3 to 7 minutes. Remove from heat and press sauce through a fine-mesh strainer to remove seeds. Cool to room temperature, cover the bowl with plastic wrap, and refrigerate until chilled, at least 45 minutes.

QUICK & EASY MICROWAVE BERRY SAUCE / SYRUP
I used a mixture of fresh blackberries, raspberries and blueberries for this, but I don't see why frozen or any combination of berries wouldn't work. I also used a sugar-free pancake syrup; if you're so inclined, you can use regular maple syrup. I've used this as a topping for pancakes and plain waffles, too.

MICROWAVED RASPBERRY SAUCE
A quick way to make a Raspberry Sauce without using pots & pans. Good in summer over ice cream or for a simple elegant dessert put a scoop of ice cream in a meringue shell or between 2 meringues and pour over sauce! - In a small jug or bowl mix the sugar with the custard powder or cornflour.
- Stir in the water or wine and microwave on High for 2 mins approx or until it boils and has thickened.
- Stir, then leave to stand for 2 minutes.
- Stir in the fresh or thawed raspberries.
- Add the brandy or rum, if desired, and cover while sauce cools.
- Serve either warm or cold as suggested in the introduction.

- Combine rasperries, sugar, lemon juice, and salt in a small saucepan set over low heat. Cook until berries release their juices and just start to break down, about 5 minutes. Using a rubber spatula, press berries through a fine-mesh sieve; discard solids. Return strained juice to saucepan, stir in cornstarch, and cook until mixture comes to a boil. Let cool. Store, refrigerated, in an airtight container for up to 3 days.

EASY CRANBERRY SAUCE - MICROWAVE
This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

- Combine the raspberries, sugar, and orange juice in a saucepan. Whisk the cornstarch into the cold water until smooth. Add the mixture to the saucepan and bring to a boil.
- Simmer for about 5 minutes, stirring constantly, until the desired consistency is reached. The sauce will thicken further as it cools.
- Puree the sauce in a blender or with a handheld immersion blender and strain it through a fine sieve. Serve warm or cold. The sauce will keep in the refrigerator for up to two weeks.
