MINI APPLESAUCE PUFFS
I would make these for my kid's school parties when they were in grade school and when I was home-room momming. It was a healthy and good for you choice that teachers were pleased to have served as treats.

Steps:
- 1. Pre-heat oven to 400 degrees.
- 2. Combine biscuit mix, 1/4 cup sugar and 1 teaspoon cinnamon.
- 3. Add applesauce, milk, egg and oil. Beat vigorously for 30 seconds.
- 4. Grease 2 small muffins tins and fill two-thirds full. (yields 24)
- 5. Bake in 400 degree oven for 12 minutes. Or until it comes out clean with a tooth pick. Ovens may vary.
- 6. Dip tops in melted butter and then into sugar mixed with cinnamon. Yeilds 24

- Combine biscuit mix, ¼ cup sugar and ½ teaspoon cinnamon.
- Add applesauce, milk, egg and oil. Mix until moistened.
- Fill greased 2" muffin pans two-thirds full.
- Bake in 400 degree oven 12 minutes or until done. Cool slightly; remove.
- Dip tops in melted butter (or margarine), then in ¼ cup sugar mixed with ¼ teaspoon cinnamon. Makes 12 to 18 puffs.

- Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in applesauce and vanilla. In another bowl, whisk flour, baking powder, salt and nutmeg. Add to creamed mixture; stir just until moistened., Fill paper-lined mini-muffin cups three-fourths full. Bake 10-12 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks., For topping, in a small bowl, mix sugar and cinnamon. Dip tops of warm muffins in melted butter, then in cinnamon sugar. Serve warm.

Steps:
- Preheat oven to 350°F.
- Combine the dry ingredients in small bowl.
- Combine the wet ingredients in large bowl, and then add dry ingredients and stir until combined.
- Spray a mini muffin tin with non-stick spray and measure the (slightly sticky) batter into the tins by the tablespoon (don't use muffin liners, the dough sticks too much).
- Sprinkle each muffin with a bit of light brown sugar to coat the top (don't skip this step if you don't have to, the brown sugar adds a lovely touch to the muffins).
- Bake for 10 minutes, let them sit in the tin for a couple of minutes and then move the muffins to a rack to cool completely.
- Alternative: bake in a loaf pan for 55-60 minutes or until an inserted toothpick comes out clean.
