MINI CHERRY COBBLERS
Nothing beats a lightly sweet biscuit-topped cobbler. I want plenty of juicy fruit, sure, but there had better be enough topping that I get some in every bite. For me, individual cobblers are the way to go -- that way, people don't have to share their biscuits.

- Preheat the oven to 375 degrees F (190 degrees C), with a rack in the middle. Line a baking sheet with parchment paper and place eight 6-ounce round or oval baking dishes on it.
- For the drop biscuits: In a food processor, pulse together the flour, brown sugar, baking powder, baking soda, and salt. Add the butter and pulse until it's well incorporated -- the mixture should look like coarse meal.
- In a container with a spout (such as a 2-cup liquid measuring cup), whisk together the buttermilk, egg, and vanilla. Pour the mixture into the food processor and pulse just until the dough comes together.
- For the mini cherry cobblers: In a small bowl, whisk together the granulated sugar and flour. In a large bowl, toss the cherries with the lemon juice, then add the sugar mixture and toss to coat the fruit. Divide the cherries evenly among the baking dishes.
- Divide the biscuit dough into 8 equal pieces. Crumble a piece of dough evenly over the surface of each dish of fruit. Brush the topping with the egg wash and sprinkle with turbinado sugar.
- Bake the cobblers until the topping is golden brown (the fruit may bubble up around the edges a bit), 30 to 35 minutes. Cool for 5 to 10 minutes before serving.

BEST CHERRY COBBLER
I love this simple cherry cobbler so much that I used to ask for it on my birthday instead of a birthday cake. Everyone I've ever made it for have loved it. My mom taught me the recipe and I've played around with it only a little (by cutting down the sugar slightly or using a different pie filling.)

Steps:
- Preheat oven to 350 degrees.
- Melt butter in casserole dish (or the dish you use to bake the cobbler).
- In a separate bowl, mix together the milk, flour, and sugar.
- Pour the mixture into the dish with the butter, don't stir.
- Then add the pie filling again, not stirring, but do take a fork and move the filling around, just to disperse the mixture.
- Bake for 1 hour.

- Place cherries in saucepan on medium heat. Cover for 10-15 minutes, stirring often.
- Add in sugar, cornstarch (sugar and cornstarch whisked together), and almond extract. Turn to low heat and simmer for two minutes or until mixture thickens. Remove from heat. *You can cool and use later for skillet cobblers, or use right away.
- Pour all of cherry filling into 1 large skillet or divide evenly for 2 mini skillets. You want the cherry filling to fill about ½ of the skillet (it might overflow if filled more than half).
- Combine flour, sugar, cinnamon, and salt. Cut in cubed butter until mixture is crumbly. Drop spoonfuls of cobbler topping on top of cherry filling.
- Line a baking sheet with aluminum foil to catch any cherry filling that comes out of skillet. Bake at 400 degrees F. for 20-25 minutes. This will depend on whether you are making one larger cobbler or two smaller ones. Watch carefully, and cobblers are done when cobbler topping is golden brown.

- Preheat oven to 400 degrees. In a bowl, combine flour, baking powder, salt, and 1/2 cup sugar. Using large holes on a box grater, grate butter into flour mixture. With a fork, stir in cream until dough just comes together. On a floured work surface, roll out dough to a 3/4-inch thickness with a floured rolling pin. With a knife or biscuit cutter, cut out 8 to 12 rounds or squares of dough.
