MIDDLE EASTERN LIMONANA

This Middle Wastern limonana recipe is a bright-green combination of lemon and mint inspired by the drinks found on tables throughout the Middle East.

Steps:

  • In a blender, combine the lemon juice, mint, sugar, and 1/2 cup of the water and blend until fully liquid. Strain through a fine-mesh sieve, reserving the liquid and discarding the solids. In a pitcher, stir together the mint mixture and the remaining 3 1/2 cups water. Serve over ice cubes.

1 1/2 cups freshly squeezed lemon juice (from about 9 lemons)
3 cups loosely packed mint leaves (from about 20 stems)
1 cup granulated sugar
4 cups still water

Steps:

  • In a small saucepan, combine sugar and 1/4 cup water. Bring mixture to a boil, stirring until the sugar has dissolved. Remove from heat. Let stand until completely cool.
  • In a large pitcher half-filled with ice, add 2 cups water, lemon juice, simple syrup, mint, and lemon slices. Stir to combine. Serve over ice. Garnish with mint leaves and lemon slices.

Steps:

  • Slice 7 lemons thinly.
  • Seed sliced lemons and place in a large mixing bowl.
  • Add 12 mint leaves; sprinkle with sugar.
  • Pour in boiling water.
  • Let sit for 45 minutes at room temperature, occasionally pressing lemons and mint with a wooden spoon.
  • Strain liquid through a fine-mesh strainer into a glass punch bowl or a pitcher with at least a 2 1/2 quart capacity.
  • Juice the remaining lemon; add to the strained liquid.
  • Add cold water; stir well.
  • Add ice cubes; stir rapidly.
  • Ladle or pour lemonade and a few ice cubes into each glass; garnish each with a mint leaf.

Steps:

  • Place sugar and mint in a large bowl. Using a wooden spoon, press the mint and sugar against the side of the bowl until the sugar resembles wet sand and the mint is bruised. Stir in 2 quarts water.
  • Transfer mixture to a pot; heat over high heat until almost at a boil. Turn off heat; stir in lemon juice. Pass through a sieve; discard mint. Serve hot, garnished with a sprig of mint if desired.

Steps:

  • Mash lemons, mint leaves, and sugar (and salt, if using) in a large, deep bowl with potato masher or back of wooden spoon until lemon slices give up their juice, sugar is dissolved, and juice is thickened to syrup consistency, about 4 minutes.
  • Pour half the lemon slices and syrup through a large sieve over bowl; press on solids with masher or back of wooden spoon to release as much liquid as possible.
  • Discard solids; move liquid to serving pitcher.
  • Repeat process with remaining lemon slices.
  • Stir in water until blended.
  • Chill well and stir to blend before serving, over ice. Enjoy!
