Steps:
- 1. Preheat oven to 375. Line baking sheets with Silpats; set aside. 2. In a medium bowl, whisk together flour, baking soda, cloves, ginger, cinnamon, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine shortening and sugar. Beat on medium speed until light and fluffy, about 2 minutes. Add egg and molasses, and beat to combine. Add dry ingredients, and beat on low to combine. 3. Place 1/4 C sugar in a small bowl. Using a 1 1/2 inch ice-cream scoop (small), form balls of dough. Roll dough balls between the palms of your hands until smooth. Roll in sugar. Place about 2 inches apart on prepared baking sheets. Bake until the cookies are set in the center and begin to crack about 7 minutes, rotating the baking sheets once after 2 minutes. Transfer the baking sheets to a wire rack to cool, 5 minutes. Transfer cookies to rack until completely cool. Store in an airtight container up to 1 week.

MOLASSES CRISPS
Steps:
- In a mixer, cream together the butter and the sugar until light and fluffy. Scrape down the sides of the bowl with a rubber spatula, then beat the egg. Cream until the mixture is light and lemon-colored. Add the molasses and mix until combined. Scrape down the side of the bowl.
- In a separate bowl, stir together the salt, ginger, cinnamon, and baking soda. Add this to the butter mixture and mix until combined. A third at a time, add the flour to the butter mixture and mix just until combined. Wrap in plastic and chill at least 2 hours or overnight.
- Preheat the oven to 350 degrees F and lightly grease two baking sheets. Roll the dough into balls 1/2 to 2 inches in diameter (depending on what size you like them) and arrange them in well-spaced rows on the cookie sheets. Bake about 10-12 minutes, just until crisp. The cookies will be thin and flat. Let cool on the baking sheet 2 minutes, then transfer to wire racks. When cool, store in an airtight container.

Steps:
- Melt shortening in small saucepan over low heat.
- Remove from heat; stir in brown sugar, molasses and corn syrup.
- Set aside; cool.
- Place 1 1/2 cups flour, ginger, baking soda, cinnamon and cloves in large bowl; stir to combine.
- Beat in shortening mixture.
- Gradually beat in remaining 1/4 cup flour to form stiff dough.
- Knead dough on lightly floured surface, adding more flour if too sticky.
- Form dough into 2 discs; wrap in plastic wrap and refrigerate 30 minutes or until firm.
- Preheat oven to 350 degrees.
- Grease cookie sheets; set aside.
- Working with 1 disc at a time, roll out dough on lightly floured surface to 1/16-inch thickness.
- Cut dough with floured 2 3/8-inch cookie cutter.
- (If dough becomes too soft, refrigerate several minutes before continuing.) Gently press dough trimmings together; reroll and cut out more cookies.
- Place cutouts 1/2-inch apart on prepared cookie sheets.
- Bake 8 minutes or until firm and lightly browned.
- Remove cookies to wire racks; cool completely.
- Place small strips of cardboard or parchment paper over cookies; dust with sifted powdered sugar.
- Carefully remove cardboard.

- Preheat the oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners, or generously grease with cooking spray.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the molasses. Combine the whole wheat flour, all-purpose flour, cinnamon, ginger, baking soda, and powdered buttermilk; stir into the molasses mixture alternately with the water. Mix just until blended. - In a bowl, cream butter and sugar; beat in molasses and coffee. Stir together flour, baking soda, salt and spices; add to molasses mixture and mix well. Chill dough 1-2 hours or until easy to handle. If needed, add a little additional flour before rolling. On a lightly floured surface, roll dough to a 1/4-in. thickness. Cut with holiday cutters dipped in flour. Place on ungreased baking sheets. Bake at 350° for 12-15 minutes. Cool on wire racks. , For icing if desired combine gelatin and water in a small saucepan. Let stand for 5 minutes to soften. Add sugar. Heat and stir over very low heat until the gelatin and sugar dissolve. Transfer to a bowl. Add confectioners' sugar; beat until foamy. - Make cookies:
- Finely grind walnuts in processor. Add 1/4 cup flour and 1/4 cup sugar and blend to powder. Using electric mixer, cream butter with brown sugar and vanilla in large bowl until fluffy. Beat in molasses and egg. Mix remaining 1 3/4 cups flour with nut mixture, spices and baking soda. Stir into butter mixture (dough will be soft). Divide dough into 2 pieces. Flatten each into disk. Wrap each disk tightly in plastic and refrigerate 1 hour.
- Preheat oven to 350°F. Butter heavy large cookie sheets. On heavily floured surface, roll 1 dough piece out (keep remainder refrigerated) to thickness of 1/8 to 1/4 inch. Cut out cookies using 3-inch leaf cookie cutter. Transfer to prepared cookie sheets, spacing 1/2 inch apart. Repeat rolling and cutting with second dough piece. Gather scraps and chill 15 minutes. Reroll scraps and cut out more cookies. Bake until golden, about 10 minutes. Cool on racks.
- Make icing:
- Using electric mixer, beat sugar and egg whites until smooth.
- Spoon icing into pastry bag fitted with 1/16-inch round tip. Pipe icing atop cookies. Decorate with dragées. Let stand until icing sets. (Can be prepared 2 weeks ahead. Store refrigerated between layers of waxed paper in airtight container. Let stand 5 minutes at room temperature before serving.)

- Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup sugar; set aside.
- With an electric mixer, beat butter and remaining cup of sugar until combined. Beat in egg and then molasses until combined. Reduce speed to low; gradually mix in dry ingredients, just until a dough forms.
- Pinch off and roll dough into balls, each equal to 1 tablespoon. Roll balls in reserved sugar to coat.
- Arrange balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes (cookies can be baked two sheets at a time, but they will not crackle uniformly). Cool 1 minute on baking sheets; transfer to racks to cool completely.
