- Put all of the ingredients in a large pot and cover them with 6 quarts of cold water. Bring to a boil, lower the heat and simmer gently, until it reduces to 2 1/2 quarts, about 2 to 3 hours. Strain through a sieve lined with cheesecloth.

Steps:
- Combine the celery, leeks, onions, carrots and water in a stockpot. Bring the water to a boil over high heat. Lower the heat and simmer until the broth reduces to 1 gallon, about 1 1/2 hours. Strain through a sieve lined with cheesecloth. Pour it into a saucepan and reduce it to 4 cups, about 45 minutes. Strain. Season with the salt and pepper.
CAMBODIAN HOT-POT BANQUET WITH VEGETABLES AND SEAFOOD

- At least one day before serving, make the broth by placing the chickens in a large stockpot. Add the water and bring to a boil. Lower the heat and skim off the foam as it rises. Cook 10 minutes. Add the lemongrass, coriander, salt and pepper. Simmer slowly for 4 hours.
- To make the dipping sauce, juice 2 of the lemons. Peel the other lemons with a paring knife, removing all peel and pith. Cut the lemon sections away from the membranes. Squeeze out the lemon remains to get all the juice. Set aside.
- Chop the garlic in a food processor. Add the lemon sections and juice and pulse to make a coarse puree. Scrape into a bowl and stir in the sugar, nuoc mam, chicken broth and chili-garlic sauce. Store, covered, in the refrigerator. (Let come to room temperature before serving.)
- Strain the broth through a fine- mesh sieve. Refrigerate overnight and skim off the fat. Place in a large pot and bring to a boil.
- Blanch the vegetables in the broth one type at a time, removing them with a slotted spoon or skimmer before adding the next group. Make sure the broth is simmering before adding the vegetables. Blanch the fennel until crisp-tender, about 5 minutes; zucchini until tender, about 3 minutes; carrots until tender, about 12 minutes; asparagus until crisp-tender, about 1 to 2 minutes; mushrooms until tender, about 3 minutes; Napa cabbage until crisp-tender, about 15 minutes, then untie; taro root until tender, about 15 to 20 minutes; scallions until tender, about 5 minutes; potatoes until tender, about 15 minutes; broccoli florets until tender, about 5 minutes. The vegetables can be blanched a few hours ahead of time.
- To serve, strain the broth again and divide between 2 electric cook pots, large fondue pots or large pots that can be placed over electric hot plates.
- Arrange the vegetables and the raw seafood on platters. Spoon the dipping sauce into 8 individual shallow bowls or plates. Guests should have long-handled forks, or individual dipping baskets, soup spoons, chopsticks and soup bowls.
- At the table, heat the broth to a simmer and let guests cook the seafood and reheat the vegetables in the broth, as well as ladle some broth into their bowls.
ROOT VEGETABLE PUREE

- Preheat the oven to 400 degrees. Brush the carrots, parsnips, turnip and sweet potato with the olive oil and place the vegetables on a large baking sheet. Roast until tender, about 30-45 minutes, turning frequently. Set aside to cool.
- Peel the sweet potato. Finely chop all of the roasted vegetables and transfer to a large saucepan.
- Add the celery root, mace, nutmeg, thyme, broth and Sherry vinegar. Bring to a boil and simmer over medium heat for 15 minutes. Transfer to a blender or food processor and puree until smooth. Add the salt and pepper. Serve with the veal shanks.

- Heat oil in a stockpot over medium heat until hot. Add onions, celery and garlic. Cook and stir 5 minutes or until tender. Add leeks and carrots; cook and stir 5 minutes. Add water, mushrooms, parsley, thyme, salt, peppercorns and bay leaf; bring to a boil. Reduce heat; simmer, uncovered, 1 hour. , Remove from heat. Strain through a cheesecloth-lined colander; discard vegetables. If using immediately, skim fat. Or, refrigerate 8 hours or overnight; remove fat from surface. Broth can be covered and refrigerated up to 3 days or frozen up to 6 months.

- Preheat oven to 400 degrees. Divide the ribs, onions, carrots and celery between 2 large roasting pans and roast, stirring twice, for 30 minutes. Transfer to a stockpot and add the water and garlic. Deglaze the roasting pan with the wine and add to the pot. Bring to a boil. Lower heat and simmer, skimming as needed, for 2 hours. Strain, reserving the ribs and discarding the vegetables. Degrease the broth and stir in salt. When cool enough to handle, pull the meat off the bones, cut into large chunks and save for another use, or use in soup.

WORLD'S GREATEST VEGETABLE BROTH
This makes a broth that is slightly thick with a rich color and full flavor. The broth can be frozen in one or one and a half cup blocks for later use. This recipe also leaves you with a bowl full of delicious cooked vegetables, I love to snack on them cold.

- Preheat oven to 450 degrees F (230 degrees C).
- Remove leaves and tender inner parts of celery and set aside.
- Toss onions, carrots, tomatoes, bell peppers and turnips with olive oil. Place vegetables in a roasting pan and place them in the 450 degrees F (230 degrees C) oven. Stir the vegetable every 15 minutes. Cook until all of the vegetables have browned and the onions start to caramelize, this will take over one hour.
- Put the browned vegetables, celery, garlic, cloves, bay leaf, pepper corns, Italian parsley and water into a large stock pot. Bring to a full boil. Reduce heat to simmer. Cook uncovered until liquid is reduced by half.
- Pour the broth through a colander, catching the broth in a large bowl or pot. The liquid caught in the bowl or pot is your vegetable broth it can be used immediately or stored for later use. Although the vegetables are no longer necessary for your broth they are delicious to eat hot or cold, don't waste them!

ROASTED VEGETABLE BROTH
Steps:
- Preheat the oven to 400 degrees. Lightly oil a baking pan or cast-iron skillet and line it with the carrots, onions, turnips and garlic. Roast, turning frequently for 45 minutes to an hour to caramelize well. Remove from oven.
- Place the vegetables in a soup pot. Add 1 cup of cold water to the roasting pan, scrape well with a wooden spoon and drain what remains into the soup pot.
- Add 3 quarts of water to the vegetables, as well as the clove and thyme. Simmer for 2 hours. Remove from heat.
- Add the ginger. Allow the broth to sit for one hour and strain. Discard the vegetables. The broth will keep in the refrigerator for up to one week. It can be frozen for up to two months.
