~ BEST HAM LOAF ~ MUSTARD GLAZE
Hubbies request for his lunches this week! A Pennsylvania favorite! I'm always experimenting with my ham loaves...hubby said this is his favorite so far!

Steps:
- 1. Preheat oven to 350 degree F. In a large bowl, mix milk and cracker crumbs. Let crackers absorb milk a few minutes. Mix all remaining ingredients until well blended. Spray a 9 x13 baking dish. Dump in the mixture and shape into loaf as you would for mess loaf. Place in oven and bake for 1 hour.
- 2. While baking, place all glaze ingredients into a small saucepan. Bring to a boil, then simmer for a few minutes, stirring often, until sugar is dissolved and starting to thicken some, remove from heat.
- 3. After hamloaf has baked 1 hour, glaze top and continue baking another 15 minutes. Glaze again, then serve hot. The remaining glaze can be served with.
HAM LOAF WITH BROWN SUGAR GLAZE
This is one of those staples in Central PA that I never realized is more of a local dish. My friend who moved away from here was missing ham loaf, so I sent him my recipe & am sharing. Around Central PA, you can find ham loaves at every butcher shop. Ask your butcher to grind some smoked ham for you if you cannot find it...

- 1. Preheat oven to 350 degrees. Mix the ham & pork together, then add the crackers, milk & egg. Mix all of this well together. (I use my hands.)
- 2. Shape into a loaf or put in a loaf pan (just like meatloaf). Bake in oven.
- 3. Meanwhile, make the glaze. Cook brown sugar, vinegar, mustard, & honey in a saucepan on the stove for about 10 minutes, stirring every so often.
- 4. After ham has baked for 40-45 minutes, baste the loaf with half the glaze. I like to poke a few fork holes into the loaf to get the sauce all throughout. Cook for another 15 minutes & then add the rest of the glaze & bake for an additional 5-10 mins.
- 5. Enjoy! This is great hot or cold. I actually prefer it cold. Note: My friend told me she adds pineapple juice to the glaze, which I think is brilliant, & another friend mentioned she puts some pineapple juice right in as she's mixing the meats, and I'll be that makes it extra juicy & delish! Going to do that next time, too. :)
MOM'S MEATLOAF

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MOM'S MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
- In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
- Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
- Bake uncovered for 45 to 60 minutes.

- 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
- 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
- 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
- 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
- 5. Place onto a serving platter and slice. Serve with remaining glaze.
HAM LOAF WITH HORSERADISH SAUCE
This variation on meat loaf is quite tasty. Creamy horseradish sauce adds the right spark.

Pat into a greased 5-3/4x3x2-in. loaf pan or shape into loaf and place in a shallow baking pan., In a small saucepan, bring glaze ingredients to a boil; pour over loaf. Bake at 350° for 35-40 minutes or until a thermometer reads 160°, basting occasionally. Meanwhile, for sauce, place mayonnaise and horseradish in a bowl. Fold in whipped topping. Serve with ham loaf.
