HEARTY HOMEMADE SPAGHETTI SAUCE

Steps:
- In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Add the mushrooms; cook for 2 minutes. , Stir in the tomatoes, tomato paste, water, bay leaf, sugar, salt, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes, stirring often. Discard bay leaf. Serve sauce over spaghetti. Sprinkle with Parmesan cheese.

- In a Dutch oven coated with cooking spray, cook beef, onion and red pepper over medium-high heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain., Add zucchini and mushrooms; cook 3-5 minutes longer or until tender. Stir in tomato sauce and seasonings; bring to a boil. Reduce heat; simmer, covered, 15 minutes to allow flavors to blend. Meanwhile, cook spaghetti according to package directions., Serve spaghetti with sauce and, if desired, cheese.

MOM'S FAMOUS HEARTY SPAGHETTI SAUCE
My family and friends all love this incredibly easy recipe. It produces a thick, hearty sauce with a ton of flavor. Additional meat can be added (I add meatballs and a combination of sweet and spicy sausage as my budget affords). Enjoy! Note: The longer you allow the sauce to simmer, the better the flavor. If I'm home, I usually let the sauce simmer for the better part of the day on the stove or cook it overnight in a crock pot.

Steps:
- Combine all ingredients in large stock pot (or crock pot if cooking overnight).
- Allow sauce to simmer on low heat until all vegetables are soft and meats are cooked through.
- Sprinkle top with pepper (I use about 3/4 tbsp).
- After a few hours, taste the sauce. If it is a little acidic, add the sugar and continue to simmer.
- Serve with favorite pasta and Parmesan cheese.
