SCARY MONSTER CUPCAKES
Cake mix, frosting and decorations make these scary cupcakes the perfect Halloween treat.

Steps:
- Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
- Divide frosting into five separate small bowls. Stir 1 teaspoon desired color gel food color into each bowl. Spoon each color frosting into separate decorating bag fitted with desired tip. Pipe frosting on cupcakes to look like monster's fur.
- Decorate each cupcake as desired using candy eyeballs and decorating gel.

- For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with black cupcake liners.
- Mix the flour, baking soda and salt in a medium bowl. Microwave the milk in a large microwave-safe bowl until bubbling, about 1 minute. Whisk in the cocoa until dissolved. Whisk in the granulated sugar, oil, vanilla and egg until smooth. Fold in the flour mixture until combined.
- Divide the batter among the cupcake liners (about 1/4 cup per liner). Bake until a toothpick inserted in the center comes out clean, 15 to 18 minutes. Let the cupcakes cool in the pan for 10 minutes, then remove to a wire rack to cool completely, about 1 hour.
- For the frosting: Meanwhile, beat the butter in a stand mixer fitted with a paddle attachment on medium-high speed until light, fluffy and almost double in size, 4 to 5 minutes. Turn the mixer to low, add the marshmallow creme and confectioners' sugar and beat until just combined, about 1 minute.
- Divide the frosting into 5 separate bowls. Color one bowl with purple gel food coloring, one bowl with orange gel food coloring, one bowl with neon green gel food coloring, one bowl with blue gel food coloring and one with black. Spoon into 5 separate piping bags fitted with small star tips (we used a size 15 tip).
- For the decorations: Pipe monster faces and hair on top of the chocolate-covered graham cookies. Decorate with candy eyes. Use the remaining frosting to pipe on top of the cupcakes. Place one decorated cookie on top of each cupcake.
MONSTER CUPCAKES

- In a bowl mix together the icing with the green food coloring until desired "monster green" is reached. Put the frosting in a pastry bag or resealable plastic bag fitted with pastry tip. Pipe a haphazard squiggle pattern on top of the cupcake until completely covered and slightly mounded. Put a green gummy ring on top. Create eyes for the monster by putting 2 brown coated candies into the center of the green gummy candy. Repeat with the remaining cupcakes.
- Use cashew nuts to create horns by inserting them into the frosting behind the eyes with the smaller side facing up. Repeat with remaining cupcakes. Arrange the cupcakes on a serving platter and serve.
MONSTER MOUTH CUPCAKES

- Cut the red fruit leather rolls into twenty-four 2 1/2-inch lengths. Slightly overlap 2 pieces lengthwise, pressing to adhere; repeat with the remaining pieces.
- Spread a thin coat of vanilla frosting on each cupcake. Place a red fruit leather rectangle on top of each cupcake, trimming any overhang with kitchen shears.
- Cut big fangs from a marshmallow with shears, then halve mini marshmallows on the diagonal to make mini fangs. Dab some vanilla frosting on the sticky cut sides and arrange on the fruit leather for the fangs.
- Fill a piping bag fitted with a small star tip (#17) with dark chocolate frosting. Pipe frosting around the mouth as the fur.
COOKIE MONSTER CUPCAKES
I made this recipe a few weeks ago and I'm yet to find a more deliciously peculiar cupcake!

Steps:
- 1.Preheat the oven to 180°C (Electric oven | Electric fan oven 160°C | Gas Mark 4) and place paper cases into a muffin tin
- 2.Using an electric whisk, food processor or wooden spoon, beat the butter and sugar until light and fluffy
- 3.Add in the egg, beating it well
- 4.Fold in the flour
- 5.Bake in the oven for 10 - 20 minutes. After 10 minutes, check to see if the cupcakes are ready by inserting a cocktail stick into one of the cupcakes. If it comes out dry then the cupcakes are done. If not, pop the cakes back in the oven for a few more minutes. Lift the cupcakes out of the muffin tin and leave to cool on a wire rack.
- Butter Frosting Recipe: Mix the unsalted butter, icing sugar and vanilla
- 1.Add the tablespoons of milk, one tablespoon at a time and stir in well
- 2.Whisk for 10 minutes
- 3.Take out 4-5 tablespoons of the mixture and keep in a separate bowl
- 4.Add the blue food colouring to the remaining mixture. Stir well.
- Decoration Recipe: 1.Once the cupcakes are cooled, cover them in the blue butter frosting.
- 2.Next make the coloured coconut. Add a few drops of food colouring to the coconut and coat thoroughly. Spread the coconut out on wax paper to air dry for a couple hours. To make the coconut better resemble the Cookie Monster's furry coat, you can pulse the coconut in a food processor.
- 3.Sprinkle the tinted blue desiccated coconut over the cupcakes.
- 4.To make the eyes, pipe out two balls of white butter icing (use a baggie with the corner snipped off if you don't have a pastry bag)
- 5.Add a chocolate chip, with the flat surface facing upwards, to each ball of white butter frosting
- 6.Use a sharp knife to make a cut for the mouth and wedge in your favourite cookie
- 7.Enjoy....and try not to eat them all at once!

- Heat oven to 190C/170C fan/gas 5 and line a 12-hole muffin tin with deep cake cases. Put all the cake ingredients into a large bowl and beat together with electric hand beaters until smooth. Spoon the mix into the cases, then bake for 20 mins until risen and a skewer inserted into the middle comes out dry. Cool completely on a rack. Can be made up to 3 days ahead and kept in an airtight container, or frozen for up to 1 month.
- For the frosting, work the butter, milk and vanilla into the icing sugar until creamy and pale. Colour with food colouring, if using, then create your own gruesome monster faces using sweets and sprinkles.
