KUWAITI CINNAMON-ORANGE ICED TEA
Provided by Aarti Sequeira
Yield 6-8 servings
Number Of Ingredients 6
Steps:
- Make the tea: Combine 8 cups water, the orange peel and cinnamon stick in a saucepan over low heat and bring to a boil. Add the tea bags and turn off the heat. Let the tea steep for about 5 minutes (no more or else it will be bitter), then remove the tea bags and chill the tea; don't remove the cinnamon stick or the orange peel yet.
- Meanwhile, make the syrup: Combine 1 cup water, the sugar and ginger in a small saucepan over low heat and bring to a boil without stirring. Once boiling, turn off the heat. Rip the mint leaves and stalks into pieces and drop into the syrup. Let cool to room temperature, about 20 minutes. Strain the syrup, discarding the mint and ginger.
- Strain the tea into a pitcher. Add the mint syrup according to your taste buds and stir. Serve in tall glasses over ice and garnish with orange slices and cinnamon sticks, if you like. Sip languorously.
MOROCCAN SPICED COFFEE
Tea often comes to mind when people think of Morocco, but the Moroccans also love coffee. This version is very milky and sweet, with only a mild coffee taste but some interesting spices you might not have thought to put with coffee. They use a tall, fairly narrow, coffee pot and Mohammed, who taught me how to make this, stressed the importance of letting the milk heat until it froths and rises up in the pot. Surprisingly, it did not burn as I had expected, knowing how easily milk can scald, although I would keep an eye on your milk just to make sure. Also, the Moroccans drink this very sweet, saying lots of sugar brings out the spices. Add sugar to your taste.

- Combine all the fruits in a bowl and pour over the hot tea. Cover and leave in a cool place overnight to allow the fruits to plump up and absorb the tea.
- Sift the flour, ras-el-hanout and salt together in a large bowl, then add the brown sugar. Add the fruit mixture (including the liquid) and the egg, stirring until combined. The batter should be a dropping consistency – if it is too thick, add a little milk.
- Scrape the cake mix into the prepared loaf tin and place in the oven for 50-55 minutes, until a skewer inserted into the centre comes out clean. Remove from the oven and set aside for 10 minutes before inverting onto a cake rack to cool.
